Wine will not turn sour but it will change over time. Keeping the wine in a cool dark place will increase it's shelf life. Fortified wines like sherry and madeira will improve with aging. The normal wines are meant to be drunk young as they will slowly become vinegar if left too long. Open it and drink it soon if the flavour is off it has been around too long.

No, but wines that sit on the shelf for long periods at a time makes the wine stronger and you get hella drunk. It had me tore up from the floor up.....lol
