Crispy Chicken Strips

INGREDIENTS
1/4 cup butter, melted
1 1/2 cups crispy rice cereal, coarsely crushed
2 tablespoons all-purpose flour
2 teaspoons salt-free seasoning blend
1 pound boneless, skinless chicken breast tenders
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
Place butter in a shallow bowl. In a separate shallow bowl, mix the crushed cereal, flour, and seasoning blend. Dip chicken tenders in the butter, then press in the cereal mixture to evenly coat. Arrange in the prepared baking dish. Drizzle with any remaining butter.
Bake 25 minutes in the preheated oven, or until chicken juices run clear.

Crispy Chicken Tenders

1 cup All-purpose flour
1 tsp Poultry seasoning
2/3 tsp Paprika
1 tsp Onion powder
1/2 tsp Garlic powder
1/4 tsp Salt
ds Pepper
1 x Egg
1 tsp Milk
3/4 lb Chicken tenders
Cooking oil

Combine dry ingredients in a plastic bag. In a bowl, lightly beat eggs and milk. Dip chicken pieces in egg mixture and shake off excess. Shake a few chicken pieces in the bag at a time, coating well. In a large skillet, heat 1/4 in. of oil over high heat; brown chicken on all sides. Reduce heat to medium and continue cooking for 10 minutes.
Notes for next time: Cook on high much longer - until quite brown, not just beige. Add more spices with a zing.

My family loves Pecan crusted chicken tenders

Chicken tenderloin
coat the chicken in egg, flour and crushed pecans
fry these until a golden brown color
we serve them with honey mustard and a huge salad

When I want crispy , I roll them in egg then flour, and repeat the egg (flour again) I then use a bread crumb mix. I do salt and pepper the chicken and the eggs first.
