Frittata (an Italian Dish)
6 eggs
1cup of any pasta, cooked, I use linguine, but macaroni, spagetti, penne, any kind will do
1 salad tomato, chopped, you can use canned chopped up without the juice, optional
1/2 a yellow onion, diced
1/2 a cup sliced mushrooms
1 tablespoon Oregano
1 tablespoon basil
2 cloves of garlic, chopped
(you can add meat to this too, about a cup, but I guess you dont have any, so next time, ok?)
Mix everything well, together in a bowl
In a hot round skillet, add a tablespoon of any oil, and a pat of butter
Let melt, and pour your Frittata mixture in, and cook for about 5 minutes, until the sides start to break way from the pan (to make cooking faster, use a spoon and make holes in the middle so the uncooked egg gets to the surface of the hot pan)
Use a large plate, cover the frying pan, and flip the Frittata onto it, then slide it back into the pan for 1 more minute of cooking.
Serve on a nice platter, with Salsa on top, if you have it.
Cut it like a pie or cake, Delicious!
These ingriedients except for the pasta are optional. You can put near anything in Frittata, and dont add milk to the eggs, it makes them too soft, you can add about a tablespoon of water to them, if you want them to hold up better. Enjoy

How about cheese souffle
3/4 stick unsalted butter, plus additional to butter a 6-cup gratin dish
6 tablespoons all-purpose flour
2 cups whole milk
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
5 extra-large eggs
2 1/2 cups grated Swiss cheese, preferably Gruyère (about 6 ounces)
3 tablespoons minced chives
directions
Preheat the oven to 400°F. Butter a 6-cup gratin dish and set it aside. Melt the 3/4 stick of butter in a saucepan, then add the flour and mix it in well with a whisk. Cook for 10 seconds, add the cold milk in one stroke and mix it in with a whisk. Keep stirring with the whisk until the mixture thickens and comes to a strong boil, about 2 minutes. It should be thick and smooth. Remove from the heat, and stir in the salt and pepper.
Break the eggs into a bowl and beat well with a fork. After about 10 minutes the white sauce should be cool enough to proceed. Add the eggs, cheese and the chives to the sauce, and mix well to combine. Pour into the buttered gratin dish and cook immediately, or set-aside until ready to cook. If setting aside for a few hours, the soufflé can remain outside at room temperature. If assembling a day ahead, refrigerate and bring back to room temperature before baking.
Bake for 30 to 40 minutes, or until puffy and well browned on top. Although it will stay inflated for quite awhile, it is best served immediately.

You can make some really really good french toast if you have the bread:
the dipping batter is all the difference:
4 eggs
3/4 cup milk
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla
soak the bread on each side and cook over medium heat.
For an added kick - sprinkle brown sugar on each side while cooking. Yum!

mix it all with say
three/four cups of flour,
a quarter cup of sugar
one cup of milk
2 cups of water
really mix it around & use your hands if you have to then roll it out with a rolloing pin or something & spread oil on the surface with a spoon & then put on a pan for 5-10 minutes until it browns (patches of black while the chapati cooks are acceptable but probably mean you should reduce the flame)
do that & you'll have a very nice starch, but you'll need to get at least some tinned food to have it with; mixed veg, peas/sweet corn/beans mixed with corned beef can be one option...
next time prepare things like lentils, mung beans, & black eyed peas especially for just such a situation they can sit there all year until you need them & to cook you only need water onions & maybe some spice & they'll go with anything but the kitchen sink if you look for compatible acompaniments for them

Do you have flour, powdered sugar and a teeny bit of butter?
You could make crepes - basically a thin pancake batter with egg, milk and a little flour - and sprinkle them with powdered sugar (butter and a little powdered sugar is a nice topping for crepes)
(use granulated sugar or artificial sweetener if you don't have sugar)
(or you could put jam on the crepes if you have that)

Make an omelet with a filling of canned mushrooms. The French make sweet omelets with canned fruit (without the juice) even with jam and they good and are different, if the idea of sweet omelets sounds weird,it's just as sweet as putting syrup on French toast.)

Only eggs & milk? No other ingredients?
Well you'll just have to have scrambled eggs.
Try to find something to garnish them with.
If you do have other ingredients try an omelette
