I am hoping that someone will be able to help me. I am looking for the recipe that includes both buttermilk and shortening not butter or just very little butter. Please help if you can.

Old Fashioned Southern Tea Cakes

2 cup Granulated sugar
1 cup Butter - (2 sticks)
3 x Eggs lightly beaten
3/4 cup Buttermilk
1 1/2 tsp Vanilla extract
5 cup Unbleached flour - (to 6 cups)
1/2 tsp Freshly-grated nutmeg
2 tsp Baking powder
1/4 tsp Baking soda

Preheat the oven to 350 degrees. Line a rimmed baking sheet with parchment paper and oil lightly.
In a mixing bowl with a hand or electric mixer, beat together the sugar and butter until creamy. Beat in the eggs, buttermilk, and vanilla. In another bowl, combine 2 cups of the flour with the nutmeg, baking powder, and baking soda. Stir into the batter and mix well. Add another 2 cups flour and mix well. Beat in enough of the remaining flour to make a fairly firm dough.
Turn the dough out into prepared sheet and pat the dough to distribute it evenly. Dip a sharp knife into flour and cut through the dough to make 20 rectangles, 4 cuts one way and 5 the other. This won't separate the dough, but it will score it for removal after baking.
Bake for 25 to 30 minutes until puffed and lightly golden. Do not allow the cakes to brown. Let cool in the pan, then cut along the scored lines to separate the cakes.
This recipe yields 20 tea cakes.

Old Fashioned Southern Tea Cakes Recipe

Ingredients:
1 cup Butter at room temperature
2 cups granulated sugar
3 fresh eggs at room temperature
1/4 cup buttermilk
with
1/2 teaspoon baking soda stirred into it
2 teaspoons Pure Vanilla Extract
Self-rising flour as much as it takes to make a stiff dough (try 3-1/2 cups
to start)

Directions:

Preheat Oven to 350 F. Cream Butter and sugar. Add eggs one at a time beating between each. Add milk, vanilla and flour. Let set in refrigerator for two hours. Roll out very thin, cut and bake at 325 to 350 degrees F. depending upon your oven. Bake until lightly golden brown on bottom. Remove to plates or rack to cool.

Method :

* In a mixing bowl, cream together shortening and sugar. Beat in eggs. Add milk and vanilla; beat well. Stir in flour; mix well. Drop by tablespoonsful 2 1/2" apart onto greased cookie sheets. Bake at 350 for 15-20 minutes. (very good)
