Como es means "How is" in the sense of How is Jim like? ( I know the proper way to ask is what is Jim like but for the purpose of this explanation I am using it so ) never to be translated like so if the sentence is How is Jim? then it would relate to how is he feeling ( physically or the mood he is in ) and the translation is Como esta Jim?, and "How is this class?" "Como es esta clase?","Como es" also can be used to translate "How come.." adding "que" like "Como es que... "

However, the use of the ver "ser" in this question means that you are asking about the permanent characteristics of the object or person you are talking about. So I think a better interpretation would be "What's it like?" or "What's he/she like?"
In other words, the answer to this question is not, "He's in a good mood today." It's "He's tall and has blond hair."

How is it/he/she if it's a question. As is "Como es Juan?" What is Juan like?
Otherwise, "as it is". "Así es como es". = That's the way it is.

Como es... is 'how is...' or 'how is it?', and 'what is' means 'que es' it's quite different the meaning isn't it?
