I know from experience that you are over cooking the marshmallows!!! It happened to me a bunch of times. Here is the tip...when you microwave something ( especially the marshmallows) the will continue to cook for about a minute after you take them out. If you are following a recipe, your microwave may be more powerful then the recipes assumes it is. Fortunately, they are still yummy when they are bricks....but are better when soft and chewy.

There are only three ingredients so it's pretty easy troubleshooting. Fist use fresh marshmallows, use real butter or margarine not lite or spreadable kind. Second cook low and slow stirring as needed. DO NOT MICROWAVE. Once the your goop is all melted remove from heat and add cereal. Also, would be a good idea to cut your treats into bars and store between wax paper in an airtight container.

here is a recipe... try this one..
1/4 cup (1/8 lb) butter or margarine
6 cups crisp rice cereal
4 cups Jet-Puffed miniature marshmallows
Microwave butter or margarine in a large microwavable bowl on HIGH for 45 seconds`or until melted. Add marshmallows; toss to coat with butter or margarine.
Microwave 1 1/2 minutes or until smooth when stirred, stirring after 45 seconds.
Immediately add cereal; mix lightly to until well coated. Press into greased 13- by 9-inch pan.
cool, cut into squares. Makes about 24.
Notes a 1 pound bag of minature marshmallows has about 9 cups of marshmallows
from the Rice Krispies box
Rice Krispies Treats
3 tablespoons margarine
1 package (10 oz, about 40) regular Kraft (Brand) Jet-Puffed Marshmallows or 4 cups Kraft miniature marshmallows
6 cups Kellogs Rice Krispies cereal
Vegetable cooking spray
1. Melt it. Melt margarine in large saucepan over low heat. Add Kraft Jet-Puffed marshmallows and stir until completely melted. Remove from heat.
2. Mix it. Add Kellogs Rice Krispies cereal. Stir until well coated.
3. Spread it. Using buttered spatual or waxed paper, press mixture evenly into a 13- by 9- by 2-inch pan coated with cooking spray. Cut into 2- by 2-inch squares when cool.
It is best to use fresh marshmallows--do not use diet or reduced calorie margarine.

The recipe calls for 10 oz of marshmallow.
Use 16 oz instead.

make sure you dont cook the marshmellows too long, only a few minutes will do, and once they are all melted, take the pan off the stove so it will cool down and not keep cooking. i just made some tonight like that, and they are delicious!

use 1/2 cup more marshmallows, and don't heat too high. use low slow heat. YOU are not using the microwave right? they have to be done on the stove top with really really low heat.

I don't use marshmallows...I use corn syrup and peanut butter. They are very chewy....
