I know there is a large market out there for unique and special bedding fabrics, I just wonder if its profitable. If i'm spending $200 on a duvet cover, how much is it costing me to produce it?

It really depends on the market. Are you going into mass production, or are you going for a true botique setup with one of a kind or very small runs? If you have a good location with well to do clientel, then a botique can do very well. But if you set up shop somewhere where walmart is the place to shop, prepare to fail. I would think you could have a markup of between 100-400 percent on items you make yourself. Make for 50 sell for 200, that type of margin. Try and find someplace that is more upscale.
