extra long eye contact, maybe our conversations are a little too long too....I noticed last week he wasn't tending to me like he usually does.
He acted busy, like he didnt notice me, but approached me with a quick hey! as I was walking out of the store.
I don't get it. Is he interested or not?

Ever heard the expression "don't **** where you eat ?" It means don't go out with and/or sleep with coworkers. It really makes for a difficult situation for later on if things don't work out.

He is interested.....but thinks that you are not. After the first couple weeks he was hopping for a sign from you that said 'i like you a tad bit more then just a co-worker'...he would have even gone for a 'maybe i like you, just give me more time to get to know you'
But you just kept it bland and normal and all level. So he is in the same spot with you now as he was weeks ago. So he figures what is the point of doing anything with her now.
If you really like him, you need to act fast. Take a big step outside the 'normal way people act at work' and let him know how you feel.

he could be playing cat & mouse for all i know.
IF he's interested in all days but one, dont doubt it...
but like the other person said.
I would go out/date collegues from within the same workplace.
