Apple Stuffed Chicken!!!
INGREDIENTS
2 skinless, boneless chicken breasts
1/2 cup chopped apple
2 tablespoons shredded Cheddar cheese
1 tablespoon Italian-style dried bread crumbs
1 tablespoon butter
1/4 cup dry white wine
1/4 cup water
1 tablespoon water
1 1/2 teaspoons cornstarch
1 tablespoon chopped fresh parsley, for garnish
DIRECTIONS
Combine apple, cheese, and bread crumbs. Set aside.
Flatten chicken breasts between sheets of waxed paper to 1/4 inch thickness. Divide apple mixture between chicken breasts, and roll up each breast. Secure with toothpicks.
Melt butter or margarine in a 7 inch skillet over medium heat. Brown stuffed chicken breasts. Add wine and 1/4 cup water. Cover. Simmer for 15 to 20 minutes, or until chicken is no longer pink.
Transfer chicken to a serving platter. Combine 1 tablespoon water and cornstarch; stir into juices in pan. Cook and stir until thickened. Pour gravy over chicken, and garnish with parsley. Serve.

Well I don't cook so good so I might watch this space.
But you gotta have some red Chilli (vegi or meat)
and
I love my mom's Chicken soup.
It has a richer taste if you crock pot it.
1 whole chicken or various parts.
3/4 cover with water
sprinkle soy on chicken.
add 1 cut up potato and 1 carrot (or more to taste)
1/4 bay leaf
2 round pepper corns
(I like two or 3 thai peppers too - or crushed red pepper)
1 clove garlic.
1/2 yellow or white onion.
crock pot for hours till skin falls off
make 1 cup bullion water .. add to taste, do not add too much.

Cook up some real Egg Noodles.
or in the South Cornbread.
or in the North .. Drop Dumplings.

Beef Stroganoff Soup
1/4 C. butter
1 lb. tenderloin tips cubed
2 cloves garlic minced
12 oz. mushrooms sliced
1 large onion diced
1 C. shredded carrots
1 pint of water
1 T. beef base
Roux made of 1/2 C. butter and 1/2 C. flour
salt and pepper
1 pint of whipping cream
1/2 C. sour cream
1/4 C. chopped chives
In a 5 qt. pot, melt the butter and add tips, garlic. Cook until meat is browned, about 5 minutes.
Add mushrooms and onions. Saute until onion is translucent.
Add carrots, water, beef base, salt and pepper. Bring to a boil and simmer for 15 minutes.
Make roux by melting butter and add flour to it. Stir until smooth and cook 2 minutes. Gradually add to soup, stirring all the time. Add whipping cream and taste to adjust seasonings. Remove from heat and add sour cream.
Ladle soup into bowls and top with chives.
Makes 6 - 8 servings.
Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Easy Apple Crisp:
Ingredients:
- 3 large tart apples
- 1-2 tablespoon sugar
- 1/2 cup water
- 1 cup flour
- 1 cup light brown sugar
- 1 cup finely chopped pecan or walnuts
- 1/2 cup butter, softened
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
Directions:
1. Peel and core 3 tart apples and slice thinly.
2. Butter an 8" x 8" baking dish.
3. Cover the bottom of the dish with half of the apples.
4. Pour 1/2 cup water over apples.
5. Sprinkle with sugar – for sweetness if desired.
6. Cover with remaining apples.
7. Combine the flour, light brown sugar, and chopped pecans.
8. Cream butter and work into mixture gradually until mixed.
9. Add cinnamon, nutmeg and cloves, and mix thoroughly.
10. Spread mixture evenly over apples, pressing down at the edges and cutting several gashes to permit steam to escape.
11. Bake at 350 for 50 minutes.
12. Serve warm with a scoop of vanilla ice cream or whipped cream.

Chicken Pot Pie
1 can cream of potato soup
1 pkg. of pie crust
1/4 c. milk
4 oz. of peas*
4 oz. of carrots*
salt and pepper to taste
1 1/2 c. cooked cubed chicken
Preheat oven to 350 degrees. In large bowl, mix soup, milk, carrots, peas, and dash of salt and pepper. Mix well, pour into one of the crust, and top with second crust. Make a few slits in the top crust, and bake for 30-45 minutes until it's done or golden brown.
*You can use brocolli, and cauliflower instead of peas and carrots.

Slow Cooker Pork Chops with Apple-Cherry Stuffing
1 package (6 ounces) herb stuffing mix
2 medium celery stalks, chopped (1 cup)
1 medium tart cooking apple, peeled and chopped (1 cup)
1 medium onion, chopped (1/2 cup)
1 cup dried cherries
1/4 cup butter or margarine, melted
1 cup chicken broth
6 pork boneless loin chops, about 1/2 inch thick
1. Spray inside of 4- to 5-quart slow cooker with cooking spray.
2. Mix all ingredients except pork. Place half of the stuffing mixture in slow cooker; top with pork. Spoon remaining stuffing mixture over pork.
3. Cover and cook on low heat setting 6 to 8 hours or until pork is tender.
Slow Cooker Roast Pork with Fruit
Imagine, slow cooker 'n spice aromatherapy and dinner done when you walk in the door after a hectic day.
1 medium onion, sliced
1 pork boneless loin roast, 2 pounds
1 package (8 ounces) dried fruit pieces or raisins (1 1/2 cups)
1/2 cup apple juice
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1. Place onion in 4- to 5-quart slow cooker. Place pork on onion; top with fruit. Mix remaining ingredients; pour over fruit.
2. Cover and cook on low heat setting 7 to 9 hours or until pork is tender. Serve fruit mixture over pork.

Thick soups of any kind. Pea, mixed bean, chili, potato chowder, clam chowder, etc.
But no squash. I just don't like the taste.
