Fresh will always be healthier. When vegetables are cooked, some of the nutrients, vitamins, and enzymes in the vegetables are broken down and so will not help your body. Also, many processed foods like spaghetti sauce and ketchup have added sugar and sodium.

Fresh is always the best. The longer the veggie sits after it has been picked the more nutrients it loses. Still fresh is always healthier than processed. You'll find most foods lose their nutrient value through that process.
