Most restaurants' brocc-cheese soups I've eaten have cnunks of brocc in them! I suppose you could puree this when you're done cooking it, though.
Broccoli Cheese Soup
1 cup fresh or frozen broccoli, chopped small
¼ cup onion, finely chopped
3 tablespoons butter
Kosher salt and fresh black pepper
3 tablespoons flour
2 cups chicken stock
½ cup heavy cream
½ cup shredded Velveeta
½ cup shredded cheddar cheese
In a heavy saucepan sauté onion in butter until tender. Whisk in flour, salt and pepper until smooth and simmer for one minute. Gradually stir in broth until mixture boils and thickens. Stir in cream, broccoli and cheese and simmer to desired thickness.

Traditional Fresh Broccoli and Cheese Soup
Make a roux: (2oz butter) Gently warmed, gradually add plain flour one small spoon at a time and mix in thoroughly. Keep on very low heat. When it forms into a soft ball, flatten it out and turn it while you warm it through for a minute or two. (low heat)
Very, very gradually, stir in a little milk, stir this with a hand whisk or a fork until all the milk has been taken up into the roux, only then add a little more. Otherwise it will go lumpy so need to be patient doing this. Keep going till you have added about half a pint of milk. (Still on a very low heat setting)
Put ample sprigs of FRESH broccoli into a blender or very finely chop and stir this into the mixture. Now stir in a pint of cream. Add black pepper to taste.
Gradually bring to heat though DO NOT BOIL. Then turn down to simmer for around 10 mins stirring occasionally.
Grate either a good strong Cheddar cheese or blue stilton (not too much stilton - taste soup as you add) and stir in.
Serve with a few fresh grating of cheese and a couple of small sprigs of uncooked broccoli on top.

TGI Friday's Broccoli Cheese Soup Recipe
Ready in: 30-60 minutes
Serves/Makes: 6
Ingredients:
4 cups chicken broth
1 cup water
1 cup half & half
4 slices Kraft Cheddar Singles
1/2 cup all-purpose flour
1/2 teaspoon dried minced onion
1/4 teaspoon ground black pepper
4 cups broccoli florets (bite-size)
***Garnish***
1/2 cup shredded cheddar cheese
2 teaspoons minced fresh parsley
Directions:
Combine chicken broth, water, half & half, cheese, flour, onion and pepper in a large saucepan. Whisk to combine and to break up any lumps of flour.
Set heat on medium. Bring soup to a boil, then reduce heat to low. Add broccoli to soup and simmer for 15-20 minutes or until broccoli is tender but not soft.
For each serving spoon soup into a bowl and garnish with a tablespoon of shredded cheese and a pinch of parsley.
*Add onion powder if you don't want to add minced onion

A delicious and creamy soup that is similar to a restaurant favorite.
Creamy Cheesy Broccoli Soup
1 (2 3/4 ounce) packet country gravy mix
1/2 cup cool water
1 1/2 cups water
2 cups frozen broccoli, thawed
2 cups grated cheddar cheese
2 tablespoons Parmesan cheese
1 1/2 cups milk
1 tablespoon shredded cheddar cheese (to garnish)
1. Mix country gravy mix with 1/2 cup of cool water, set aside.
2. Bring 1-1/2 cups water to a boil.
3. Pour mixed gravy and water into boiling water, whisk
vigorously until thickened.
4. Add thawed broccoli, grated cheese, Parmesan cheese, and milk (more or less milk may be added until desired consistency.
5. Simmer over medium heat, stirring occasionally until broccoli is cooked tender.
6. Pour into blender and blend until smooth.
7. Adjust seasoning to taste, i.e. salt & pepper
8. Pour into large soup bowls and top each with 1 tbl shredded cheese.

I have been given a equipment combination that became magnificent one time, yet have not considered it on the cabinets lower back. I start up with veggie broth from the canning drinks and cooking drinks from greens from different foodstuff that I keep in freezer boxes. convey this to a boil, and upload seasonings, corn starch slurry just to thicken it somewhat, then stir interior the shredded cheddar fairly at a time until eventually the soup is superb and thick and not lumpy. Then I upload the grated broccoli. finally I upload an exceptionally good pink wine, to it to skinny it down and supply it a super style. i do no longer often cook dinner from recipes, yet attempt copying issues I even have tasted in eating places until eventually i'm getting them good. There are no longer any measurements right here, so which you settle on in case you want to attempt it my way or no longer.

CHEESY BROCCOLI CHICKEN SOUP
1/2 c. minced onion
1/4 c. butter
1/4 c. flour
1/2-1 tsp. salt
2 c. milk
2 1/2 c. chicken broth
2 c. grated cheese
1 lb. cooked diced chicken
1 (15 oz.) pkg. thawed chopped broccoli
Saute onions in butter until tender. Add flour and salt for 2-3 minutes. Add milk, broth, stirring constantly. Add cheese and stir until melted. Add chicken and broccoli. Heat and serve.

Cheesy Broccoli Soup
1 10 oz. can low-fat condensed cream of celery soup
1 10 oz. can condensed cream of chicken soup with rice
1 10 oz. can Campbell?s condensed cheddar cheese soup
1 Pint low-fat half and half cream
1 16 oz. bag frozen broccoli
1 tsp. salt
1 tsp. pepper
Place frozen broccoli in saucepan and cover with water. Bring water to a boil and boil for 3 minutes. Drain boiled broccoli.
Combine cream of mushroom soup, cream of chicken soup, cheddar cheese soup, half and half, salt, pepper, and drained broccoli in a large saucepan.
Heat on low, stirring often for 3-5 minutes.
