I notice that it is much quicker to format my camera's Compact Flash Card rather than use the delete all function. Does formatting put more wear on the card or cause any other problems?

There are no issues - formatting is the preferred method.
Err. Actually, there is ONE reson to use 'delete all': you won't delete protected pictures.

The memory card can become fragmented over time with normal use. Formatting the memory card periodically can restore the card's performance to its new condition.

I format mine after every use

once the memory/photo's have been copied to my system, I format. deleting may not "clean up" the files/space
