The three end characters in a file name are called file extensions e.g. obscure.doc, obscure.txt, obscure.dat.
Windows associates these with a program. This is usually set when you install a program.
To remove/change an association open Windows Explorer, Tools, Folder Options, File Types. You'll now see a list of all the file extensions and you can change the program using on-screen options.

In windows explorer (not IE) select Tools - folder options - file types.
Look for the extension DOC
This will show you the default program this opens with.
Selecting 'change' allows you to change this
