Simple Answer is Yes. You will not be competetive but you will be fine on this "fat-tire" bike. However, if you enjoy doing this Triathlon, start saving your money. Because if you get caught up into doing more Triathlons you will want a road or Tri specific bike.
Also, some Triathlons have a "fat-tire" division. Something you can check on with the race organizers.
Remember " You don't have to win..you only have to TRI"
Good luck with your Triathlon and here is a great website www.trinewbies.com. Also http://www.usatriathlon.org/ which is the "governing" body for most Triathlons.

RE:
Can you ride a hybrid bicycle in a triathlon, or must you use a road bike?
I have a nice Trek 7100 hybrid, and want to train for a sprint triathlon. Is this bike okay?

You don't need Tri specific bike to compete in a Triathlon you can ride about anything you like, but as someone stated You most likely won't be to competitive.
I have seen some Tri bikes and some riders do not spend a great deal of money on their bikes and some do, it just depends on how serious you are about the sport.
Some people do a Triathlon not to win , but to gain that feeling of personal achievement, just to know they accomplished something that very few people have done or do is enough, that's their win, It's a personal Victory --- go for it.

It depends on the rules for the specific triathlon. Most sprint triathlons allow pretty much any bike, but the bigger and longer races might allow road bikes only. Check with the race organizers to be sure.

The 7100 is fine...I just completed my second sprint triathlon and saw people riding everything from $4000 tri bikes to $200 mountain bikes. Worry less about the bike and more about the swim! That's where most people struggle...
So go ahead and ride the 7100, and have fun!

I don't think you'll be kicked out for using it, but it won't be nearly as fast as a road or triathlon bike.

You might consider buying slick tires, which are fairly thin and have no knobbies. I picked up a set of slicks from Performance for about $20 and it made a huge improvement in my road speed. I have a Trek 4900.
