Balti Chicken
1 tbl oil
4 x boned and skinned chicken breast halves cut in 1" cubes
1 x green bell pepper chopped
1 x red bell pepper chopped
1 lrg onion chopped
1 cup Balti sauce see recipe
2 cup long-grain white rice cooked
fresh cilantro chopped
In a large heavy skillet or wok, heat oil over medium high heat and cook chicken until pieces are no longer pink. Add the chopped bell peppers and onions to the pan and stir fry 3-5 minutes. Add the Balti sauce and simmer
about 5 minutes.
Serve over cooked white rice, garnished with chopped fresh cilantro.
Balti Sauce
1/2 cup low sodium chicken broth
3 x serrano peppers seeded and chopped
2 lrg yellow onions sliced
1 tsp garlic minced
1 tsp fresh ginger minced
1 tsp turmeric
1 tsp garam masala
14 1/2 oz canned tomatoes chopped
1/2 cup fresh cilantro leaves
Heat 1/4 cup of chicken broth in a large saucepan. Add serrano peppers, onions, garlic, and ginger. Saute until onions are soft, about 5 minutes.
Add remaining ingredients. Heat to a boil. Lower heat; simmer 20 minutes.
Let cool. Pour mixture into blender and add 1/4 cup of chicken broth.
Yields 3 cups. Puree until smooth. Sauce can be refrigerated for a week or frozen for up to two months.

Try this website www.ndtvcooks.com. They have very recipes and very authentic ones. I usually make this chicken recipe whenever i want to eat something spicy, although you can adjust the spice level according to your taste .
1-2lbs boneless chicken ( i usually use the boneless skinless thigh)
2tbs yogurt ( fat free or any plain ones
1tsp red chilli pwd or ground paprika
1/4 tsp cumin pwd
you can ketchup, or any sauce you like around 1 tsp
don't go buying any spices use whatever is available at home.
salt to taste.
juice of half lemon
1tsp chopped cilantro
Clean and cut the chicken pieces into arund 2 inches pieces.Mix all these ingredients with hicken and keep it aside for around 1/2 hr. You don't have to do it if you are in a hurry. marinating it for a while will infuse all the flavor in the chicken. In a wok heat either 3/4 stick of butter or 4tbs of oil. you can use less if you want as chicken releases it own fat and water. Once the oil hetas up ( not till you see smoke, if that happens reduce the heat and wait for a while till the oil cools down a bit). add the chicken, do not add water. on a medium heat cover the chicken and cook for around 5-10 mins stirring occasionally. the chicken will cook in it own water and yogurt, hence water is not needed. After a while uncover the pan and cook for another 5 mins till the water evaporates and till the chicken is cooked. sprinkle cilantro and Voila! chicken ready. Eat it with bread or just by itself. * Combine mango, orange juice & sweetener in food processor. Blend for 1 1/2 minutes.

Method :
* In frypan, place olive oil and heat over medium temperature. Add chicken, ginger, garlic and onion; saute about 10 minutes or until chicken is brown on all sides and onion is transparent. Meanwhile, in crockpot, place chicken broth (I used 1/2 cup warm water with 3 chicken bouillon cubes), cumin, coriander, parsley flakes, curry powder, and pepper. In a small separate dish, combine the cornstarch and soy sauce. When smooth, stir into the crockpot with the spice mixture. Add the browned chicken and onion mixture into the broth/spice mixture in crockpot.

Indian Spinach and chickpeas
3 Tbsp. veg. oil
1 med. onion, diced
salt and pepper
2 cloves garlic, minced
1 Tbs. curry powder
1 Tbs. ground cinnamon
1 tsp. ground coriander
1 tsp. ground cloves
1/4 tsp. cayenne pepper
1 cup whole milk plain yogurt
3/4 cup half and half
2 -10oz. pkgs. frozen chopped spinach, thawed
1 - 15oz. can chickpeas, drained and rinsed
Heat oil in med. skillet over med. high heat. Add onions and saute until translucent. Season with salt and pepper, to taste. Add garlic and cook for another minute. Add spices and cook until fragrant. Add yogurt, half and half, thawed spinach with its liquid, and drained chickpeas. Bring to a simmer over medium heat and cook until heated through. Enjoy!!
