it only takes very little time for fish to cook. If you have a fish steak or chunk of fillet, and decide to pan fry it, then it's just a matter of minutes. It really depends on how thicks the slice is. if it's about 1 inch thick, a few minutes (say 2-3 minutes) each side should be enough. One thing to remember is never to turn it over more than once or touch it while it's cooking as it will break and will look horrible.

Generally speaking, cook it until the flesh is opaque and flakes easily with a fork. Don't over cook it or it will be dry. You can look up approximate times for different fish and method of cooking because it also depends on those things and the thickness of the fish. I personally suggest the Joy of Cooking.
