Peanut Butter-Hazelnut Brownies
Chewy, soft and fudgy.
1 cup unsalted butter
2 cups sugar
2 teaspoons vanilla extract
4 large eggs
1 cup all-purpose flour
3/4 cup cocoa powder (non-alkalized)
1/2 teaspoon baking powder
Dash salt
1/2 cup smooth peanut butter
1/2 cup hazelnut-chocolate spread
Preheat the oven to 350 degrees F. Grease a 9 by 13-inch glass baking dish.
Melt the butter over low heat; when melted remove from heat and stir in the sugar and vanilla.
Add the eggs 1 at a time, beating after each addition.
Add flour, cocoa, baking powder and salt, and mix well.
Mix the peanut butter and chocolate spread in a small microwave-proof bowl, and heat in the microwave until it reaches a runny consistency. Stir the mixture into the batter; then pour it into the baking pan that has been lined with buttered foil.
Bake for 30 minutes. Allow to cool before cutting and serving.

BEGINNER BROWNIES
1 stick butter or margarine
2 squares unsweet chocolate
1 cup sugar
2 eggs
1 teaspoon vanilla
3/4 cup flour
1/2 cup chopped nuts (optional)
IMelt butter and cohocoalte togehter. Mean while, use the butter wrapper to grease a square 8 inch baking pan. Shake a little flour, then shake out excess flour.
When butter and choclate have melted, remove top from double boiler (if you used one) and set it on counter to cool. Add sugar.
When mixture is room temperature, belnd in eggs, 1 at a time, beating well. Do this by hand or mixer. Add vanilla extract. Stir in flour and nuts, or alternative. Stir only until the ingredients are well mixed. Spread batter into prepared pan.
Bake at 360 f for 30 minutes, no lnoger. Remove from oven and place on a rack to cool. When room temp, cut into 16 squares.
Variation: Add a cup of peanut butter (in addition to), or maple syrup to the batter. You could even add some cherries or hazelnut spread.

1/4 teaspoon salt
3/4 cup chopped walnuts (optional)
DIRECTIONS
Preheat oven to 375 degrees F. Grease and flour a 9x13 inch baking pan.
In double boiler over low heat, melt the chocolate and butter together, stirring frequently until smooth. Remove from heat and let cool.
In a large mixing bowl, mix together eggs, vanilla, salt and sugar. Beat with an electric mixer for 8 to 10 minutes. Slowly pour in chocolate mixture and flour. Stir in the walnuts. Spread batter evenly in the prepared pan
Bake for 17 to 20 minutes in the preheated oven, until the top is crackled. Let cool for 2 hours before cutting into squares

One Bowl Brownies

Original recipe yield: 2 dozen
INGREDIENTS
* 112 g unsweetened chocolate
* 170 g butter
* 400 g white sugar
* 3 eggs
* 5 ml vanilla extract
* 125 g all-purpose flour
* 120 g chopped walnuts
DIRECTIONS
1. Preheat oven to 350 degrees F (180 degrees C).
2. Microwave chocolate and butter or margarine in large bowl at HIGH for 2 minutes or until butter or margarine is melted.
3. Stir until chocolate is melted. Stir in sugar. Mix in eggs and vanilla. Stir in flour and nuts.
4. Spread in greased 13 x 9 inch pan. Bake for 35 minutes (do not overbake).

BROWNIES WITH CREAM CHEESE SWIRL
For swirl
3 ounces cream cheese, room temperature
2 tablespoons (1/4 stick) unsalted butter, room temperature
1/4 cup sugar
1 large egg
1 tablespoon all purpose flour
1/2 teaspoon vanilla extract
For brownies
6 ounces sweet baking chocolate (such as Baker's German's Sweet Chocolate), chopped
3 tablespoons unsalted butter, room temperature
1/2 cup sugar
2 large eggs
1/2 cup all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons vanilla extract
1/4 teaspoon almond extract
1 cup semisweet chocolate chips
1/4 cup chopped walnuts
Make swirl
Preheat oven to 350°F. Lightly butter 8-inch square nonstick baking pan. Using electric mixer, beat cream cheese and butter in medium bowl until light and fluffy. Gradually add sugar and beat until well blended. Beat in egg. Mix in flour and vanilla. Set mixture aside.
Make brownies
Stir baking chocolate and butter in heavy small saucepan over low heat until smooth. Cool slightly. Using electric mixer, beat sugar and eggs in large bowl until slightly thickened, about 2 minutes. Mix in flour, baking powder and salt. Mix in chocolate mixture and extracts. Stir in chocolate chips and walnuts.
Spread half of chocolate batter (about 1 1/4 cups) in prepared pan. Using rubber spatula, spread cream cheese mixture over chocolate batter. Spoon remaining chocolate batter over top of cream cheese mixture. Using tip of knife, gently swirl through batter, forming marble design. Bake brownies until tester inserted into center comes out with a few moist crumbs attached, about 30 minutes. Cool brownies in pan on rack. Cut into squares.
Makes 16.
