When your painting surface is facing you like a wall, you are less likely to skew your proportions, making perspective appear correct and natural.
Also you can view your subject (a landscape, model or photograph) and paint it in the same light.
You'll find the lighting will be more even, less likely to glare off the paint surface.
Your brush strokes will be more natural, moving from your shoulder instead of your wrist. It's less tiring to paint this way, and the work won't look so "tight".
You have the opportunity to stand back and view your work as a whole.
When using pastels or charcoal, the dust will fall straight down, reducing the need to brush it off.
All good reasons to use an easel. Of course, with watercolour it's different - that needs to be on a flat surface, so standing at a waist-high table is best.

Easels are just one of many devices to hold the canvas, board or other surface firmly and conveniently when painting. I have used the side of a car, the floor, a sidewalk, lamppost, garbage can...anything that supports the surface can work. Easels were developed as a simple solution.

To keep your arms out of the wet paint! Seriously, have you ever tried to write or draw on a large piece of paper on a table or on the floor? You pretty much have to get right on it to be able to reach all the area. If you use an easel and long handled brushes, it's much easier to get to the top and bottom of a canvas.

because easels are easier to paint on than canvas.lol. actually, easels just keep the canvas up where it is easier to reach, and most easels allow for pitch to further enable ease, hence the word 'ease'l.

It gives you a better line of proportion of what you are painting. Painting on a flat surface may let you paint unevenly.
