Well i have one for PAO BHAJI (Vegetables on Rolls)
4 potatoes
1/2 head cauliflower
2 carrots
1 cup green peas
1/4 cup channa dal
2 onions, chopped
4 tomatoes, sliced
12 bread rolls (or buns)
2 tablespoons oil
oil, to pan-fry the rolls
Seasonings
1 teaspoon salt
1 teaspoon mustard seeds
2 whole red chilies
1/2 teaspoon red chili powder
2 teaspoons pao bhaji masala (available at Indian grocery stores)
Wash, peel, and cut the potatoes.
Wash, trim, and chop (or grate) the cauliflower and carrots in small pieces.
Rinse and drain dal and put in a 2-quart pot to boil in 2 cups water.
When little cooked (after 10 minutes), add the potatoes and salt.
Cook until the potatoes are done; mash them along with dal.
Add the chopped (or grated) cauliflower, carrots, and green peas to the dal mix.
Cook for another 15 minutes until the carrots are tender.
Add water, as needed.
Heat 2 tablespoons oil on medium heat in a skillet.
Sauté the mustard seeds in hot oil.
Add the whole red chilies (can be removed before serving).
Add the onions; stir until translucent.
Add the cooked mixture.
Cook for about 5 minutes; it should be like a wet mixture.
Stir in red chili powder and pao bhaji masala, to taste.
Separate the rolls.
Toast them in a hot skillet, using little bit of oil for each roll.
Put the prepared filling and a slice of tomato between two halves.
Serve hot.

Pav Bhaji
(authentic Indian Asian also known as Bombay Street Food)
4 med red potatoes boiled & chopped
2 x heads cauliflower bite size
2 med green pepper cored & seeded
1 cup green peas
4 lrg tomatoes, red ripe chopped
2 med onion sliced
4 x green chiles 2-3
1/4 cup cilantro chopped
2 tsp cumin seed
2 piece ginger root size of a quarter
2 lrg onion sliced
2 lrg tomatoes, red ripe chopped
1 tsp salt and pepper or to taste
2 tsp Pav Bhaji masaala
3/8 cup butter
Method :
Grind up ingredients 5 through 10 (tomatoes, onions, green chiles, cilantro, cumin, and ginger) in a blender. Saute the remaining onion in butter until it turns a golden brown. Add the remaining tomato with the spices and simmer for a few minutes. Add the contents of the blender and the vegetables. Simmer until the vegetables are tender (this seem to take longer than you would imagine). Top with more butter if desired.
To serve as authentic street food slice a loaf of French bread and toast it in butter in a fry pan. Top with Pav Bhaji and eat out of hand.

I got this recipe in an Indian cooking claas that I took quite awhile ago. When I cook and Indian dinner for company this is frequently the favorite, and of course, you can make it as spicy as you wish, but it is quite spicy if you just follow the recipe.

Delicious Pav Bhaji recipe
Ingredients
50 gms butter
1 tsp jeera
1/2 capsicum, chopped
1/2 onion, chopped
2 tomatoes, chopped
1 potato, boiled
A handful of peas
2-3 garlic flakes
1/2-inch ginger
A handful of cashewnuts
2-3 dry red Kashmiri chillis
Dhania leaves
1 tbsp pav bhaji masala
1 tbsp dhania powder
Salt to taste
For the ginger-garlic and red chilli chutney:
Blend garlic flakes, cashewnuts and ginger into a paste. Similarly blend red chillies and water into paste and set aside.
Method
1. Heat two tablespoons of butter in a tava.
2. Temper jeera, once it starts crackling, add capsicums and onions.
3. Add tomatoes and potato and mash well.
4. Heat some more butter on the tava.
5. Add ginger-garlic and red chilli chutney and mix well.
6. Add mashed bhaji and stir.
7. Add dhania leaves, pav bhaji masala, dhania powder and salt and mix well.
8. Mash the bhaji well and serve hot with pav.

Ingredients
Pav
2 tbsp butter
1/2 onions, chopped
1 tbsp, chopped capsicum
Dhania leaves
1 tbsp ginger-garlic paste
1 tbsp red chilli paste
1.2 tsp dhania powder
1/2 tsp pav bhaji masala
Salt to taste
Method
1. Heat butter on a tava.
2. Add ginger-garlic paste, red chilli paste and saute well.
3. Add onions and capsicum and mix well.
4. Add pav bhaji masala, dhania powder and mix it well.
5. Stuff this mixture in pav and cook for two more minutes.

8 pavs (squarish soft buns about 4" x 5" size) butter to shallow fry. For Bhaji 1 capsicum chopped fine 2 onions chopped fine 2 tomatoes chopped fine 2 1/2 cups chopped mixed vegetables (french beans, carrots, cauliflower, potota, bottle gourds, etc.) 1/2 cup shelled peas 2 tbsp. butter 2 tsp. pavbhaji masala 1 1/2 tsp. chilli powder 1/4 tsp. turmeric powder 1/2 tsp. sugar salt to taste 1 cup water (in which vegetables were boiled) 1/2 tsp. each ginger grated, garlic crushed juice of 1/2 lemon. To Garnish 1 tbsp. coriander chopped 1 onion chopped small pieces of lemon Method Pressure cook mixed vegetables and peas till well done. Mash them coarsely after draining. Heat butter in a pan. Add ginger-garlice, capsicum, onion, tomatoes. Fry for 2-3 minutes till very soft. Add pavbhaji masala, chilli powder, turmeric, salt, sugar and fry further 2-3 minutes. Bring to boil. Simmer till gravy is thick, stirring and mashing pieces with masala, in between. Add lemon juice, stir. Garnish with chopped coriander and a block of butter. For Pavs Slit pavs horizontally leaving one edge attached. (To open like a book). Apply butter (as desired) and roast open on a griddle till hot and soft with the surface crisp on both sides. Serve hot with bhaji, a piece of lemon and chopped onion. Making time : 30 mins. (excl. pressure cooking time) Serve : 4 (2 pavs each)
