its not a race, because you can be jewish without having a jewish ancestry. but its also not really a religion, because you can follow judaism to the letter but still not be jewish, and on the flip side you can be jewish without knowing anything about judaism.
generally its more of a nationality. being jewish means being a member of the nationality Yisrael, and the national religion of yisra'el that most people follow happens to be judaism.

Both. There is significant overlap, but there are converts to Judiasm, who are part of the religion, but not the (genetic) race, and intermarried Jews, who can be part of the race, but not the religion. If I had to pick one, I'd say religion, and call the race "Ashkenazi", or "Semitic"

Both, one can convert no matter your race. You are also considered jewish if your mother was no matter whether you practice or not.
