Because of the high likelyhood of trichanosis in the meat when there was no way of preserving it back at the time of Islam's beginning. Jews don't eat pork for the same reason.
Remember, many people would get very sick and die from rancid pork in those days. Pork spoils very quickly if not kept refrigerated or salted.
