I also fish for trout n my favourite is simply to fillet it, season witha little salt & pepper, wrap in cling film, put on a a microwaveable plate and micro on full power for 2-3 mins, depending on the size of the fillet, it barely needs any time at all to cook but make sure u cook it right through, it will retain all the flavout and wont go dry unless u over cook it, afterwards serve with buttered new potatoes and fresh veg.. simple, good for you and gorgeous, one of my favorute meals, fresh trout freezes well too so dont throw it away if you have any left, save it for a later date.

Bacon-Wrapped Trout with Lemon Relish:
1 tablespoon extra-virgin olive oil
1 large garlic clove, thinly sliced
1 large lemon--peeled, pith removed, seeded and finely chopped
Salt and freshly ground pepper
12 strips of thick-cut smokehouse bacon
Four 6-ounce trout or fresh herring fillets, skinned
1. Heat the olive oil in a small skillet. Add the sliced garlic and cook over low heat until golden, about 1 minute. Add the chopped lemon and cook over moderate heat until slightly softened, about 2 minutes. Scrape the lemon relish into a small glass or stainless steel bowl and season with salt and pepper.
2. Wrap 3 slices of bacon around each trout or herring fillet. Secure the bacon with toothpicks.
3. Heat a large skillet over moderately high heat. Add the bacon-wrapped trout fillets and cook until the bacon is browned and crisped and the fish is just cooked through, 3 to 4 minutes per side. Transfer to plates, spoon the lemon relish on top and serve.
Make Ahead: The lemon relish can be refrigerated overnight. Reheat gently before serving.

I would cook it wrapped in foil, add some onions and butter
and seal it up. Either cook in over a grill or in the oven at
375 degress until it is flaky. PS - you can buy those slivered
almonds in the baking aisle at the grocery store. Put those in
and you will have Trout Almondine.

Clean it out and season it. Put in overproof dish with a knob of butter, sprinkle with flaked almonds, cover with foil and bake at 180 degrees C for 20-25 mins - lovely !

Smoke it in a quick smoker at 200 degrees centigrade for 1/2 hour - 1 hour. Or put it in the oven at that temperature, and put some smoldering pieces of wood at the bottem of the oven. Open all the windows, and turn the fire alarm off!

Wrap it in some foil with a touch of butter and black pepper, then bang it in the oven for about 10 mins. With something that fresh and tasty you wanna keep the flavours simple, yum!

Pan fry in peanut oil. Coat in seasoned flour(salt pepper or seasoning salt) then dip in raw egg completely and cover in bread crumbs(Panko if you have it)
Create a Sour cream paprika sauce for dipping.
