I would go with the Council of Nicea in325 AD. It was here that Christianity beat out the next competing religion of Mithraism. At this point gods were absorbed into the Christian faith. In Sumeria the god Tammuz became the Phoenician god Adon and so on.
Tammuz became Thomas.You'll find all kinds of similarities like this all through the religions.

There is no one date, he didn't get popular until well after his death and the modern conception of the trinity wasn't firmed up until 325 AD.
