John's Eclair Cake:
Fill a cake pan (not a round one) with graham crackers.. Make some pudding, according to dirctions, only cut the milk down to half. Stir in Cool Whip. Spread some of this pudding over the crackers. Top with more graham crackers. Cover with rest of pudding. Cover with more graham crackers. Spread frosting over. Refrigerate 5 hours or over night. It's delicious! But the longer it regfrigerates, the better it gets.

I make a semi-homemade cake that people like very much. Ingredients 1 box of chocolate cake mix (plus the eggs/oil listed on the box) 8 oz of Ghirardelli chocolate, chopped into tiny bits or 8 oz Nestle Tollhouse Morsels 1 can of chocolate frosting Mix the cake mix according to the package directions. Spray a bundt cake pan with non-stick spray. Pour in the cake mix. Stir the chopped chocolate or Tollhouse morsels into the top 1/3 of the cake mix in the pan. Bake according to package directions, except turn the oven off for the last 10 minutes. Cool the cake for 30 minutes in the pan, then turn out onto the serving platter. Melt the frosting in the microwave (usually takes about 15-30 seconds). Pour over the top of the cake. Note that you probably won't use the entire can, so you can just cover and refrigerate what you don't use. Fill the hole in the center of the cake with fresh berries if desired.

"Chocolate Swirl Coffee Cake" - 9 servings
1/3 cup flaked coconut
1/4 cup chopped nuts
1/4 cup sugar
3 tablespoons butter or margarine; melted
2 cups buttermilk baking mix
1/4 cup sugar
1 egg
3/4 cup milk
1/3 cup semisweet chocolate pieces; melted
Heat oven to 400*. Grease square pan, 8x8x2". Stir together coconut, nuts, 1/4 cup sugar and 1 tablespoon of the melted butter; set aside.
Mix baking mix, 1/4 cup sugar, remaining melted butter, the egg, and milk. Beat vigorously 1/2 minute; pour into pan.
Spoon chocolate over batter; with knife, cut through batter several times for a marbled effect. Sprinkle coconut mixture evenly over top. Bake 20-25 minutes.

Almond-Toffee Chocolate Chip Cookies:
Prep: 30 min., Bake: 14 min. per batch
3/4 cup butter, softened
3/4 cup granulated sugar
3/4 cup firmly packed dark brown sugar
2 large eggs
1 1/2 teaspoons vanilla extract
2 1/4 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1 cup semisweet chocolate morsels
1 cup almond toffee bits
1/2 cup slivered toasted almonds
Beat butter and sugars at medium speed with an electric mixer until creamy. Add eggs and vanilla, beating until blended.
Combine flour, soda, and salt in a small bowl; gradually add to butter mixture, beating well. Stir in morsels, toffee bits, and almonds. Drop by tablespoonfuls onto lightly greased baking sheets.
Bake at 350° for 8 to 14 minutes or until desired degree of doneness. Remove to wire racks to cool completely.
Yield: Makes about 5 dozen

Yep, the easiest brownie recipe in the world!
Melt 1/2 cup of butter in a large bowl.
add in 6 tbsp of cocoa
mix together
add 1 cup of sugar and 2 eggs and mix it all together
then add 1/2 a cup of flour and mix
*The trick is to mix it with a hand wisk or even just a fork. This will make them nice and moist.*
Bake in the oven at 350 degrees in a greased cake dish for 25 minutes.

My kids and I make the greatest chocolate "truffles" like this:
1 bag of oreo cookies
2 8 oz packages of cream cheese
1 package of melting chocolate
Crush the cookies in a food processor or blender....mix in the softened cream cheese. Create small balls (about a tablespoon's worth) and lay them on waxed paper on a cookie sheet. Drizzle with melting chocolate (the kind that gets hard.)
If you have more than ten minutes (!) you can get fancy, girl.
This all depends upon your craving but you can...
* add Bailey's
* add Peanut Butter
* add Mint liquor
etc. and then if you're really ready to wow them...
Get white melting chocolate and your choice of coconut, nuts, etc. and go a little crazy with your decorations.
I guarantee that people will ask you for your recipe. It was the hit of my neighborhood last year. All the rage -- every party I went to people thought I slaved over my truffles....

YES!!! Chocolate mousse... Buy a tub of Cool Whip and some chocolate syrup. Mix the chocolate syrup in the Cool Whip until chocolaty-brown, (it will be light brown). and refrigerate. Serve with a dollop of Cool Whip on top. Eat..YUMMM!

Take a package of oreo cookies and break up into a bowl, add a large container of Cool Whip (larger then 8 oz.) and mix together. Let sit in refirgerater several hours, and then enjoy.

1 c. sugar
2 tsp. baking soda
4 tbsp. cocoa
1/4 tsp. salt
1 c. water
1 c. mayonnaise
1 tbsp. vanilla
Sift dry ingredients into a large bowl. Add the water and beat 1 minute. Add the mayonnaise and beat 1 minute. Add the vanilla and beat 1 minute.
Pour into a greased and floured pan, 13 x 9 inch square for a very high cake. Sprinkle with chopped nuts and chocolate bits for a dandy frosting. Bake at 350 degrees for 35-40 minutes.
