Until they are just pink or white depending on what kind you buy. Anything past that and they are overdone.

Tempura Shrimp Recipe - Japanese Recipe


INGREDIENTS:
12 large shrimps
1 egg
1 cup all purpose flour
1/2 cup cold water
Vegetable oil for frying
PREPARATION:
Remove heads and shells from shrimps without removing tails. Devein the shrimps. Make two or three incisions in the stomach sides of the shrimps to straighten them. Sift flour into a bowl. Pour cold water over the flour and add an egg.

Mix the batter lightly. Heat the oil to 340 degree. Dip the shrimps in the batter. Fry the shrimps for a few min.

Couldn't resist throwing in a recipe for ya:

"Garlic Shrimp" - serves 4

1/4 cup olive oil
4 large cloves garlic; finely chopped
1 teaspoon red pepper flakes
1 pound medium shrimp (prawns); peeled and deveined
2 tablespoons fresh lemon juice
2 tablespoons dry sherry
1 tablespoon paprika
salt and freshly ground black pepper
Chopped fresh flat-leaf (Italian) parsley, for garnish

In a saute pan over medium heat, warm the olive oil. Add the garlic and red pepper flakes; saute 1 minute. Raise the heat to high and add the shrimp, lemon juice, sherry and paprika. Stir well, then saute, stirring briskly, until the shrimp turn pink and curl slightly, about 3 minutes. Season to taste with salt and pepper, and sprinkle with parsley. Serve hot.

Make sure thier still edible. Devein them.Put 1/4 cup olive oil in skillit med high.Put prawns in till the turn pink.Serve over saffron rice.

no more than 3 minutes on each side or until they are a crispy reddish color

not very long, just until they turn that orange color. seafood doesn't take as much time as beef or pork.
