This is from my grandmothers cookbook and these cookies are very good and pretty easy.
Polish Tea cakes (Ciastka z Konserwa)
1/2 cup butter
1/2 cup sugar
1 egg yolk, slightly beaten
1 cup of flour
1/2 teaspoon of salt
1/2 teaspoon of vanilla (not imitation)
1/2 cup of finely chopped nuts (whatever you prefer)
Cream butter and sugar until light. Add egg yolk, mix well. Add flour sifted with salt. Mix. Roll dough in small balls. dip into unbeaten egg whites and roll in the finely chopped nuts. Place on buttered baking sheet and press down in the center with your thumb. Bake at 325 degree oven for 5 minutes. Remove and press down again with thumb and return to oven for about 10-15 minutes. Remove from oven and fill indentation with preserves while still warm, or you could place a Hershey's chocolate kiss in the middle. Good luck and God bless

(This if from the 1956 edition of Betty Crocker's Cook Book.)
Sour Cream Raisin Pie
Make pastry for one-crust pie. Line 9"-pie pan.
Beat 3 eggs until very light and fluffy.
Mix together and then add:
1 1/2 tbsp. flour
3/4 cup sugar
1/2 tsp. salt
3 tsp. cinnamon
3/4 tsp. cloves
Fold in:
1 1/2 cups thick sour cream
1 1/2 cups seedless raisins (ha! you can tell it's vintage. Do they even have rasins with seeds in them any more??)
Pour into pastry-lined pie pan. Bake until a silver knife inserted 1" from side of filling comes out clean.
Temp: 350 degrees
Time: Bake 50-60 minutes

Holiday Cookies (double batch)
Cream:
1 cup shortening
1 cup granulated sugar
1/2 cup lightly-packed brown sugar
Add:
2 beaten eggs
2 tsp vanilla
Beat thoroughly.
Blend together:
2 1/2 cups white flour
1 tsp baking soda
1 tsp salt
Combine with wet ingredients & mix well.
Fold in:
1/2 cup green marachino cherries, halved
1/2 cup red marachino cherries, halved
1/2 cup golden raisins
1/2 cup slivered almonds
grated peel from 2 oranges
Drop from a teaspoon onto baking sheets. Bake in a preheated oven for 8-10 minutes.
Yield: 6 dozen cookies

Carmel Dumplings
Amount Measure Ingredient -- Preparation Method

1 1/2 cups flour
2 teaspoons baking powder
1/8 teaspoon salt
1 teaspoon vanilla
1/2 cup sugar
4 tablespoons butter (or margarine)
1/2 cup milk
1 1/2 cups brown sugar
1 1/2 cups water

Mix together flour, baking powder, and salt. Cut in 2 tablespoons butter. Add milk and vanilla to make dough. Combine brown sugar, water and 2 tablespoons margarine in a large sauce pan or electric skillet and bring to a slow boil. Drop dough by teaspoon into boiling syrup. COVER and cook on low heat for 15-20 minutes. Remove dumplings and place in serving dish. Pour remaining syrup over them and serve warm. Sprinkle with chopped nuts if desired.

Method :
* In a large soup pot, add the pumpkin, sugar, butter, salt, pepper and water. Simmer for 20 minutes. Mash the pumpkin well and add the flour, mixing constantly. Add the milk and simmer for another 10 minutes. Serve with fried bread or toast.
* NOTE: France imported many food dishes to this country during the Revolutionary War. This is one dish however that was exported to France. Pumpkin is seldom used outside of the United States; France being the exception.
* The pumpkin has been used here in many ways; Pumpkin pie is a national tradition in the Fall. This soup was popular in America and with schools, hospitals, and covents in rural France in the late 1700's and 1800's.

Crater Cake
INGREDIENTS
1/2 cup shortening
1 1/2 cup sugar
2 eggs
2 1/2 cups flour
3 tsp baking powder
1/2 tsp salt
1 cup milk

1/4 lb marshmallows
1/2 cup brown sugar
1/2 cup chopped nuts DIRECTIONS
Cream shortening. Add sugar gradually. Add unbeaten eggs one at a time. Beat well. Add flour/salt/baking powder mix alternately with milk. Add vanilla. Pour mixture into 8x12 inch loaf pan. Cover with marshmallows. sprinkle with brown sugar and chopped nuts. Bake at 350 degrees for 45 minutes.

"Ranch Pudding" - 9 servings (1959)
1 cup brown sugar; packed
2 1/2 cups water
2 tablespoons butter
1 cup brown sugar; packed
1/2 cup milk
1 1/4 cups Bisquick
1 cup raisins or chopped dates
1/2 to 1 cup chopped nuts
1 teaspoon vanilla
Heat oven to 350*. Mix 1 cup brown sugar, water, and butter in saucepan; boil 5 minutes. Pour into 8" square pan. Mix rest of ingredients in bowl. Spoon batter on top of sugar mixture. It will sink into the liquid and will spread out as it bakes. Bake 45 minutes. Serve warm with plain or whipped cream.

Sweet Potato Croquettes
Boil, peel and mash six large sweet potatoes; season with salt, a tablespoon of butter, one of sugar and a little pepper. When cold, mold into croquettes, dip into beaten egg, then into finely rolled bread crumbs, and fry brown in hot fat.
