What nobody's mentioned while they've all been shouting 'plaster' is that in an old house, the walls are rarely square if at all, so you can't really use a patterned wall paper because it won't match properly, so you're rather lumbered with leaving it as painted plaster.

I think they look better plastered and painted. However, the old plaster can be in very bad condition under (usually) the 10 layers of wallpaper that are already on! It can be expensive to have walls replastered but the finished effect is excellent and will last you for years. Then you can wallpaper, if you fancy it!

Its a personal preference but I like walls plastered and painted.
However in a really old house (I used to live in one) sometimes the walls are not in good condition and you either need to get them freshly plastered or put wallpaper back up.

Plastered walls are nice looking and are good for sound insulation. But when the plaster cracks, wallpaper may be a good solution to covering it up

most of the time, plaster walls in an old house are the first to go. if the plaster in the house looks good, leave it plaster.

Others have said how you can smooth the wall out a bit. They're right, it can be done and can be a bit of work. Buy wide applicators and sanding tools to make it a bit easier. You can also, when you get to the paint coat, help the appearance of the wall by choosing a very flat or matte paint. They have some really good ones out there now. The flatter the paint, the less the imperfections will show. That and judicious use of lighting can make a relatively bumpy wall look pretty good. There is also anaglypta wallpaper which you paint over, comes plain or with texture embossed into it.

Personally I prefer plaster - but wallpaper can be good as an accent

Plastered. i always think paper is used because the plaster is rubbish.

Nice clean lines, even in an old house.

In an old house, if you want a classy place, I think an Anaglypta embossed paintable wallpaper looks great for the lower or upper portion of the wall or even a velvet flocked wallpaper. There are even vintage reproduction wallpapers. Wallpapering one wall and painting rest is a good option, too. It all depends on the room.
