Hot Baked Cinnamon Apples

10 apples, cored, peeled and sliced thin
2 teaspoons cinnamon
1 cup brown sugar
2 teaspoons lemon juice (optional)
1 dash salt
1 dash nutmeg
fresh whipped cream (optional) or ice cream (optional)
1. Place cut and peeled apples in a mixing bowl and gently mix all the ingredients together.
2. Put apples in a non-stick pan, and cook covered for 45 minutes at 375 degrees.
3. Stir at least once every 15 minutes.
4. Once they are soft, cook for another few minutes to thicken the cinnamon sauce.
5. I like to put everything into my baking dish and then mix it since there is less to clean up.

2 large eggs
2 tablespoons sugar
3/4 cup dry white wine
1 cup apple juice
1 pinch salt
2 teaspoons grated lemon zest
2 teaspoons grated orange zest
3 cups all-purpose flour, sifted
2 lbs tart apples, peeled, cored and cut into eighths (such as Granny Smith or MacIntosh)
vegetable oil, for deep-frying
1/4 cup confectioners' sugar (to garnish)
1 cup heavy cream, whipped to soft peaks, for garnish
1. Whisk the egg and the sugar in a mixing bowl until foamy and slightly thickened, about 5 minutes. Add the wine, apple juice, salt, lemon and orange zests and mix thoroughly. Add the flour and blend until the batter is smooth. Allow the batter to rest, covered, for 1 hour.Combine the apple wedges and the batter. Coat the fruit gently but thoroughly with batter.
2. Pour oil to a depth of 5 inches in a deep pot. Heat over medium heat until it registers to 350º F on a deep-frying thermometer.
3. To make the fritters, use a large spoon to scoop up about four apple wedges and use another spoon to push the mixture gently into the oil. Continue adding fritters to the hot oil, but do not overcrowd.
4. Deep fry until light golden brown, about 5 minutes. Drain the fritters on absorbent towels. Repeat with the remaining fruit and batter. It is best to serve fritters immediately, but if necessary, they may be kept warm in a 200° F oven while finishing the remaining fritters; leave uncovered to keep fritters crisp.Dust lightly with confectioner's sugar and serve with whipped cream.

Baked Apple:
INGREDIENTS:
6 large baking apples
3/4 cup brown sugar, firmly packed
1/2 cup raisins
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon butter
PREPARATION:
Wash and core apples, then remove a 1 inch strip of peel around the middle of each apple; place in a 2-quart shallow baking dish.
Combine sugar, raisins, cinnamon, nutmeg and brown sugar in a small bowl; fill the center of each apple and dot with 1/2 teaspoon of the butter. Add just enough water to baking dish to cover the bottom of the dish; bake, uncovered, at 350° for about 30 minutes, or until apples are tender.

Baked apples
Peel and core 4 large Bramley apples. Put in an overproof dish and fill the core hole with brown sugar and cloves. Put about an inch of water in the dish, cover with foil and bake at 180 degrees C for 1/2 hour. Pour the syrup that is formed in the bottom of the dish over the apples - delicious!

"Baked Maple Apples" - 4 servings
4 medium cooking apples
2 teaspoons margarine
1/4 cup maple-flavored syrup
Heat oven to 375*. Core apples; peel 1" strip of skin from around middle of each apple, or peel upper half of each apple to prevent splitting. Place apples upright in ungreased square baking dish, 8x8x2". Place 1/2 teaspoon margarine and 1 tablespoon syrup in center of each apple. Pour water into baking dish until 1/4" deep.
Bake, uncovered, 30-40 minutes or until apples are tender when pierced with a fork. Spoon syrup in dish over apples several times during baking.

I love this thing called an Apple Ring. It is so good, and pretty easy. The recipe came from someone my dad worked with years ago.
APPLE RING
2-3 apples chopped
2 cups of flour
Milk
2 cups of water
1 stick of butter
cinnamon to your taste
2 cups of sugar (or you can use Splenda)
On top of stove eye, in a metal 9X13 pan, cook the sugar, water, and butter until sugar is dissolved and butter is melted.
In another bowl, mix the flour and milk until it makes a sticky dough. spread flour on a flat surface and roll out the dough. Spread the apples over the dough and then roll the dough jelly style. Cut one inch pieces and lay over the cinnamon, water, butter, and sugar mix. Bake in the oven at 350 for 20 minutes.
This is really yummy with Ice Cream!!!

First, I wash and cut the green apples in halve, then core it.
Secondly, I lay the apples skin down in a baking dish.
Thirdly, I put one to two tsp. of margarine on each apple.
Fourth step is to sprinkle alot of Cinnamon sugar on top, coating the apple.
Lastly I bake the apple at 375 degrees for about 30 Min's. or until soft. Take out of oven and cool in the same pan it's in. It taste like apple pie and can be eaten with ice cream.

Gotta be classic apple crumble, i got this recipe from the BBC site, it's as good as any!
Served with Sainsbury's Extra Thick Double Cream and a glass of cava! mmmmmmmm (always a nice follow up to a homemade sunday roast on a cold day).
Ingredients
Crumble:
300g/10½oz plain flour, sieved pinch of salt
175g/6oz unrefined brown sugar
200g/7oz unsalted butter, cubed at room temperature
Knob of butter for greasing
Filling:
450g/1lb apples, peeled, cored and cut into 1cm/½in piece
50g/2oz unrefined brown sugar
1 tbsp plain flour
1 pinch of ground cinnamon
Method
1. Preheat the oven to 180C/350F/Gas 4.
2. Place the flour and sugar in a large bowl and mix well. Taking a few cubes of butter at a time rub into the flour mixture. Keep rubbing until the mixture resembles breadcrumbs.
2. Place the fruit in a large bowl and sprinkle over the sugar, flour and cinnamon. Stir well being careful not to break up the fruit.
3. Butter a 24cm/9in ovenproof dish. Spoon the fruit mixture into the bottom, then sprinkle the crumble mixture on top.
4. Bake in the oven for 40-45 minutes until the crumble is browned and the fruit mixture bubbling.
5. Serve with thick cream or custard.

Use a corer to take the core out of some baking apples. Put soft brown sugar, a little butter and chopped stoned dates in it's place. Cook like a jacket pot until fluffy.
Serve with cream - delicious and healthy.

Bramley apples. De-core. slit the skin round the middle - not too deep, stuff the middle with sultanas, brown sugar, Cinnamon, possibly a touch of brandy. Place in a baking tray with a little water for about 40 minutes at 180° (depends on size of Apple). Serve with crême anglaise (custard) or vanilla ice cream.
