i just bought one and i want to carve it, but i don't know if its to early or not, or if it even makes a difference

It makes a difference. Depending on weather, it will last longer the colder it is. Hollowed out, it will last approx 3 weeks in good shape in cool-cold weather. Left uncut, it will last a few weeks more. Rememeber to save the seeds and either eat them or throw them out for the birds.
