FRIED CHICKEN WINGS
1 lb. chicken wings
1/3 c. sake or dry sherry
3 tbsp. soy sauce
1 tsp. grated gingerroot
1/4 c. cornstarch
Cooking oil for deep-fat frying
4 thin lemon slices
Cut chicken wings at joints; discard wing tips. In bowl combine sake or sherry, soy sauce and ginger root. Place chicken in plastic bag set in bowl; pour marinade over chicken. Close bag. Marinate in refrigerator several hours or overnight, turning occasionally. Drain chicken; pat dry with paper toweling.
Coat chicken wings with cornstarch. Fry, 3 or 4 pieces at a time, in deep hot fat (365 degrees) for about 4 minutes. Drain on paper toweling. remove chicken to serving plate; garnish with lemon slices.
Makes 4 appetizer servings.

Crispy Spiced Fried Chicken:
Poultry contains vitamin B1, which allegedly counteracts anger, but the chipotle chiles and cayenne pepper in the crispy crust will do a slow burn even if you don't.
4 pounds chicken wings, legs and thighs, trimmed of excess fat
2 cups buttermilk or plain nonfat yogurt
2 1/2 tablespoons kosher salt
2 tablespoons plus 2 teaspoons ground chipotle powder
2 cups all-purpose flour
1/2 teaspoon cayenne pepper
Peanut oil, for frying
1. Rinse the chicken and pat dry. Cut the wings in half and discard the wing tips. In a bowl, mix the buttermilk with 1 tablespoon of the kosher salt and 2 teaspoons of the chipotle powder. Add the chicken, turn to coat and let stand at room temperature for 20 minutes.
2. In a resealable plastic bag, mix the flour with the remaining 2 tablespoons of chipotle powder, the cayenne and the remaining 1 1/2 tablespoons of kosher salt. Seal the bag and shake to blend.
3. In a large, heavy skillet, heat 3/4 inch of peanut oil to 360°. Working in 2 batches, shake the buttermilk off the chicken, put the chicken in the bag with the flour mixture and shake to coat well. Add the chicken to the hot oil and fry over moderate heat, turning once or twice, until golden and crisp, about 20 minutes; lower the heat if necessary so the chicken doesn't brown too quickly. Drain the chicken on a rack lined with paper towels and serve immediately.
Make Ahead: The recipe can be prepared through Step 1 and refrigerated for 8 hours.
Yield: 4 to 6

Take an egg and beat it in a bowl. Dump the chicken in there first. Then take the chicken and dump it in flour. Season the flour first with salt and pepper. You can add other spices like even some paprika and poultry seasoning too. It's going to be messy. Then, Fry it in the pan with a lot of oil.
Throw some corn in the pan with some butter. Green beans are good too. You can eat all of this with rice too. Put some tobasco sauce on chicked too afterwards.

"Buffalo Chicken Wings" - 24 pieces
2 pounds chicken wings
salad oil
1 tablespoon Louisiana hot pepper sauce
1/4 cup butter or margarine; melted
Blue Cheese Dressing (recipe follows)
Celery sticks
Carrot sticks
1) Cut tips off wings (save for soup). Split each wing at joint into 2 pieces.
2) In 4-quart saucepan, heat 2" salad oil to 375*. Lower wings into oil. Fry 15 minutes or until very tender. Drain on paper towels.
3) Meanwhile, in large bowl, stir together hot pepper sauce and butter until well-blended. Add chicken wings; toss gently to coat well.
4) To serve: Arrange chicken in bucket or on platter. Serve with Blue Cheese Dressing for dipping, celery and carrot sticks.
BLUE CHEESE DRESSING - 2 cups
1 cup mayonnaise
1/2 cup crumbled Roquefort or blue cheese
1/2 cup sour cream
1 small clove garlic; minced
1 teaspoon Worcestershire
1/4 teaspoon salt
1/8 teaspoon pepper
Dash hot pepper sauce
Milk
In small bowl, combine all ingredients except milk; mix well. Thin with milk to desired consistency. Cover; refrigerate until serving time.

This is the easier way and the best tasting way, to make chicken wings. Put them in a plastic bag, add one package of good seasons ranch salad dressing mix and shake. Place them on a shallow pan (I use non stick foil under them. You can use a spray, but they tend to really stick.) Sprinkle any left over powder on top of wings. Bake at 425 until golden brown. You really need to try this one.

The best way is to deep fry them. Season them with Texas pete buffalo wing sauce. Make some french fries to go with it. Have some ranch or blue cheese dressing for dipping. Yummmm!

I like to season my wings with salt, pepper, garlic powder,and cayenne pepper. I bread the wings with flour and then I deep fry them. When the wings start to float, it's time to take them out of the oil. I usually serve them with a mixture of ketchup, mustard, and hot sauce. You can sere wings with a lot of things. Celery, carrots, a salad, french fry, etc.

I love this recipe for fried chicken beginners.............................
SIMPLE SOUTHERN FRIED CHICKEN
1 frying chicken, skin removed if you
want lower fat. I leave the skin on.
3 teaspoons Lawry's Seasoned Salt
2 garlic cloves, finely chopped
1 cup all purpose flour
1 cup vegetable oil
1. Season chicken with all seasonings.
2. Roll chicken in flour until covered. Shake off
excess flour. Sprinkle additional seasoning.
3. Simply fry chicken in frying pan until golden
brown. I like it crispy so I cook it a little longer
than most.
You can start out with the oil very hot and then
reduce it later. This seals in the moisture and
flavor, then cooks it.
Then I would make Baked Mac and Cheese as a side:
Baked Macaroni and Cheese Recipe
Ingredients:
5 cups cooked macaroni
(approx 4 cups uncooked)
5 tbsp butter
2 eggs
1/2 tsp salt
1/2 tsp pepper
3 cups milk
2 cups shredded mozarella cheese
4 cups shredded cheddar cheese
Cook the macaroni until done as usual.
Do not overcook it. Drain macaroni in
strainer.
Place macaroni, butter, salt,pepper,
milk, mozarella cheese, and 3 cups of
cheddar cheese in casserole dish. Mix
eggs in a bowl first and then stir into
mixture.
Cover everything with aluminum foil and
cook for 45 minutes at 350 degrees.
Uncover and add extra cup of cheddar
cheese across the top. Bake uncovered
for another 15 minutes.

Homemade Potato Salad Recipe
Here is my favorite recipe for potato salad. I vary
this recipe from time to time based upon my mood and
encourage you to do the same.
Ingredients:
4 large baking potatoes.
1/4 white or yellow onion (optional)
2 large eggs
1/2 tsp salt
1/3 cup mayonaise
4 oz sweet relish
paprika
Boil the potatoes until they are done but not overcooked
I use the test here where I stick the fork in and it
meets a little resistance but not too much. How long
you boil them depends upon how big they are. You do want
the potatoes done though since no further cooking is
involve. If you overcook them, they don't really hurt
the recipe since the extra potatoe just mixes in with
the creamy portion of the mixture.
Boil the eggs over medium high heat until hard boiled.
Allow the potatoes and eggs to cool. You can run cold water
over them in a strainer to speed up the process.
Peel the potatoes and then slice into chunks. If you aim
for 1 inch by 1 inch chunck you will do well.
Peel and slice the egg into 1/2 inch pieces.
Chop the onion into very small pieces. I made this optional
because you WILL be able to smell the onion on your breath.
Therefore, if a little close contact is planned anytime soon
you probable want to leave the onion out.
Stir all ingredients gently except for the paprika.
After all ingredients are well mixed, pour into a bowl.
Add the parika across the top. Store in the refrigerator
until ready to serve.

marinate the wings overnight in these spices- 1/2 cup black pepper, 1/2 cup garlic pepper, 1/2 cup cayenne, hot sauce(1/2 cup)BBQ sauce 1/2 cup, and 2 tablespoon of hot curry seasoning and 2 tsp parsley flakes, bake or
to fry add 1 cup of flour after you drian chicken the next day. fry to a crispy brown.
as a side dish
mac and cheese with Parmesan, mozzarella and sharp cheddar cheese
kale or collard greens with black pepper for spice
cornbread with jalapenos in the middle (dice
jalapenos and spoon into cornbread mixture and cook as instructed)
salad with lettuce, tomatoes, onions, shredded carrots, avocado and cheese and Catalina dressing
or a vinaigrette(mix 1 cup of extra virgin olive oil, 1 cup red wine vinaigrette, 1 tsp salt, black pepper, 1 tsp lime-mix together in bottle refrigerate).
or coleslaw.
