I'm planning on baking a cake for a special occasion but don't like the yellowish tint most vanilla cakes have. Should I just omit the eggs?

I made a cake over the weekend and the batter didn't turn yellow until I put in the vanilla and the butter. You can get away without the eggs, I think - Angel Food Cake texture, but you need the butter unless you use shortening or something like that.
