i worked in a yatch 3 years ago, and the chefs did that kind of rice, they called machyboos, maychmus( i understood like that) and i dont have the correct name . i remember they used bashmati rice, curcum, zafrom, chiken, dry lemon, mmmm.... smell so good, but how is the correct name of this preparation???
some times they used, chiken, or lamb

Machbous - Spiced Lamb With Rice

1 kg lamb, jointed
2 large onions, chopped
4 tomatoes, peeled and chopped
2 tablespoons parsley, chopped
1 tablespoon baharat
1/2 teaspoon ground limes (loomi)
1/2 teaspoon turmeric
2 cups rice
2 1/2 cups water or stock
oil
salt

Saute lamb and onions in oil. add spices and rest except for rice. simmer covered 30 mins. add rice and cover simmer 20 mins. serve salad, bread, pickles.

hi, i live in Dubai, and they have a lot of machboos. I think it's originally an Arabic dish, mainly the Gulf, having said that a lot of Indian/Arabic dishes are similar.
Try traditional Gulf recipes on google and you'll probably learn more.
