Are you asking if you should have been more assertive and expressed your need that you had to hurry?
It can be very difficult to tell other people NO, for any reason and in any form. It is, however, a very important skill to learn.
You could have said - It's so nice to run into you, I wish we had more time to talk, but I'm hurrying right now to _________. It would have been fine, even tho you can't imagine that.

No I think you did fine. Although you were in a hurry you actually made the effort to speak to him. Most people would have said, hi and bye and hurried off.

well if your teacher was watching you and observing you while you two were talking and shaking hands, then he could have known that you are in a hurry. no worries. you were in a rush, but still you were able to acknowledge his presence and in fact shook his hands.

not if your exchange of greetings where in good taste . he knew you had to of been in a hurry or else you would of took more time.
