In one of my healthy cooking cookbooks there is a Pear Cranberry Crumble recipe. I made it 2 or 3 times and it is delicious!! I don't have the recipe with me, but there are similar recipes online...
I double the crumble part of it since the recipe I have didn't seem to make enough, my cookbook used All-Bran in the crumble.
The recipe I have makes a huge amount, like 2 quarts of crumble or more.

HOT PEAR SOUP
4 fresh pears, peeled
1 litre pear juice
1 large potato
1 leek
1 bay leaf
125 g butter
250 ml fresh cream
black pepper
1/2 litre chicken stock
salt
Melt butter in pot on medium heat. Add the sliced potato, leek and pears and cook until soft. Liquidize. Return to the pot and add the pear juice, chicken stock, black pepper, salt and bay leaf.
Add cream just before serving. Garnish soup in each soup bowl, before serving with 3 ml whipped cream and a sprig of fennel, dill or parsley.

as a pastry chef in the hotel i worked in ive done a couple of recipes with them.
1. caramalised pears with a sweet yorkshire pudding and brown bread ice cream
and 2. baked pears with toffee sauce and clooted cream ice cream.
1a.melt some oil and butter in hot pan.
b.add diced pears
c.sweat off.
d.add good hand of sugar and reduce till cooked but not burnt
yorkshire mix normal with25g of sugar for every 100g flour
baked pears. 1/4 the pears make stock syrup, enough to cover bottem of tin, add cineman star enise and orange and red wine cover and cook in oven 220c for 1hour!

One great, super simple, very yummy thing to do with pears.....
cut them in quarters and eat them with shaved Parmesan cheese. Get the good Italian stuff from a reputable store. The tangy grit of the cheese and the sweetness of the pears is the perfect pear!!! (no pun intended)

I like to make pear tart. You can make your own pastry base or buy one if you are in a hurry. The simple tart is just arrange slices af pear in the base and sprinkle with sugar, bake at 200c, 400f or mark 6 for about 45 minutes ar until light golden in colour.
To take it up a notch, you can add a layer of frangipane under the pear.
2 oz butter
1 tblspn flour
¾ cup blanched almonds
½ cup sugar
3 tblspn dark rum
1 large egg
1 tspn almond extract
Preheat oven to 190c,375f or mark 5. Chill prepared pastry case.
In a food processor finely grind the almonds, set aside. In a mixer combine the butter and sugar, mix until light and fluffy, add the ground almonds, rum, egg, almond extract and flour. Beat until smooth. Spread the mixture into the tart shell and chill for about 15 minutes.
Bake for about 40 to 45 minutes or until the tart shell is golden brown and the frangipane is puffed and golden.
Add thin sliced pears, laid into the frangipane prior to baking, The tart can be glazed or finished with powdered sugar.

One good way: Put a piece of after eight on each pear half, bake it until the chocolate melts. Serve with whipped cream.
You can also slice the pears (and apples, bananas etc), put it all in a baking tin, add all your favourite chocolates and bake at low heat until the chocolate melts. Serve with ice cream or whipped cream.

Pear Pie
Ingredients:
1/2 cup flour
1/2 cup sugar
1/4 teaspoon ground mace
1/2 teaspoon cinnamon, ground
11 fresh California Bartlett pears, peeled (if desired), sliced
2 pie crusts, 9-inch
1 tablespoon butter or margarine
1 egg white
1 tablespoon sugar
Directions:
Stir sugar with flour, mace and cinnamon; mix with pears so that all slices are coated. Divide pastry dough in half; roll half on floured board and place in 9-inch pie pan. Moisten edge with water. Turn pears into pie pan. Dot with butter and cover with top crust. Crimp edges. Brush pastry with egg white and sprinkle with sugar. Cut 4 slits in top to allow steam to escape. Bake on low shelf in 450 degree F. oven 25 minutes. (It may be necessary to wrap edge of pie with foil if it starts to get too dark.) Reduce oven temperature to 375 degrees F. and bake an additional 20 minutes. For best results, allow pie to cool at least to lukewarm before cutting into 8 slices.

Cut the pears in half and peel. Top with blue cheese such as Brie of Roquefort and sprinkle toasted almonds over. Bake in the oven untill cheese is browned. Not everybody's favourite, but if you like it, you will make it over and over...
