The map is not the territory. : ) We can map all we want, but we don't know the explicit interactions (e.g. why a schizophrenic's brain might be active where a "normal" person's brain is not), cause-effect relationships (e.g. do low serotonin levels occur before or after a person gets depression), or subtleties of social interactions (we can map the brain's response to a blink, but we don't know the meaning behind the wink).
So, though a lot of the brain has been "mapped" there is still a lot to be learned.

I'm not sure about what is mapped, but the entire 100% of the brain is used (by most people).

Judging by some of the questions and answers I see there are a lot of people around with 99% of unmapped brain. I do not mean you of course.

the whole brain has been mapped.
I have heard comments that we only use 10% of our brain (wrong see http://www.snopes.com/science/stats/10percnt.htm ) but never heard anyone claim that 10% of it is unmapped
