does anyone have a tasty tomato sauce recipe i can use for pasta,mince etc? i have loads of tomatoes in my fridge which need using up.

do u know me dave? How would you know that i dont have a life? People who reply to questions without actually answering are more prone to not having a life,as seems to be in your case, or you'd have better things to do with your life than sit at your pc making snide comments. Poor dave.

never mind dave he just wishes he had as much tomatoes as you! i love tomatoe sauce its dead versatile and you can freeze it too which makes it really convenient,roast your tomatoes in the oven with salt,pepper,few cloves of garlic sliced according to your taste.roast till its mushy and smells fab! put in a blender with plenty of fresh basil and blend to death!add a good glug of extra virgin olive oil and bobs your uncle..enjoy!

Peel and chop the tomatoes. Put the oil and whole garlic cloves in a saucepan and cook over a medium heat until the cloves begin to brown. Add the tomatoes and cook for fifteen minutes. Remove the garlic cloves and add a good handful of fresh basil leaves.

This souce is perfect with a dash of chili pepper which should be served, either powdered or crushed, at the table with the pasta. If you like to flavour your pasta with cheese, try either a mature pecorino or salty, hard ricotta, both freshly grated at the table.

The best time of year to make tomato sauce is in the summer when plump, ripe, juicy tomatoes full of flavour are abundant.

Penne are the most suitable form of pasta with this sauce. If, however, you have the time and patience to make your own pasta, then try it with taglierini, rolled out to a thickness of about two millimetres.

Fresh Tomato Sauce

INGREDIENTS:

* 1 to 1 1/2 pounds ripe tomatoes, about 3 large tomatoes
* 2 garlic cloves, peeled and minced
* 3 tablespoons olive oil
* 1/4 cup chopped fresh basil
* 1/2 teaspoon salt, or to taste
* black pepper, to taste
* 1 pound spaghetti
* freshly grated Parmesan cheese for serving

PREPARATION:
If desired, peel tomatoes; remove seeds, straining juice into a bowl. Save the juice and discard seeds. In a food processor, combine garlic, tomatoes with juice, 3 tablespoons olive oil, and basil. Pulse quickly to chop roughly.

Pulse more for a smoother sauce, if desired. Transfer to a bowl, add salt and pepper and let stand to marinate for about 20 minutes.

Cook pasta until just tender, drain and toss hot with the marinated tomato sauce. If hotter spaghetti is desired, heat the sauce just until hot on stovetop or in microwave. Serve immediately with Parmesan cheese.
Serves 4 to 6.

Tomato Sauce

2 tablespoons olive or vegetable oil
1 large onion, chopped
1 (15-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1/2 cup dry red wine
1 teaspoon dry oregano leaves
1 teaspoon dry basil leaves
Salt to taste
Heat oil in a wide frying pan over medium heat; add onion and cook, stirring often, until softened, about 5 minutes.
Stir in tomato sauce, tomato paste, wine, oregano and basil. Bring to a simmer; then simmer, uncovered, for 10 minutes. Season to taste with salt.
Makes about 4 cups sauce.

Easy No-Cook Tomato Sauce

1 lb. 3 to 4 medium fresh tomatoes, coarsely chopped
1 tbsp. olive oil
3/4 tsp. each salt and sugar
1/2 tsp. ground pepper
1 1/2 to 2 tsps. balsamic vinegar

In a food processor or blender, combine and process all ingredients to make a
rough-textured sauce. Adjust flavors to taste.
Makes about 1 1/2 cups sauce.

I chop up around 10 fresh tomatoes and a couple of small onions, add olive oil and crushed garlic. Choose herbs appropriate to whatever you are eating - I like oregano and also have a pot of mixed herbs for general use. Add salt and pepper to taste. Mix it all together and throw in whatever else takes your fancy - I like mushrooms, peppers and fresh chillies! Yum! Just with plain pasta is nice, however, if I'm making shepherds pie then I cannot resist addiing a tin of baked beans!

Any home made sauce is not that tasty than what you get in the market so avoid.
