Just use either a good chicken soup no one will notice that its a soup and will think its a good sauce or a mushroom soup.

Do it the Malaysian way.
Cook the rice as you normally do and leave aside.
Cut the chicken breasts into bite size, fry it and then add the peas and a few other vegs of whatever you fancy but not potatoes.
You may also add cuts of fried eggs.
Pour the cooked rice on this mixture, add a little of butter( if desired )and stir, leave off heat for a while before serving. It is Delicious, healthy and complete meal.

if you fry some onions cut into small with some garlic and then add the peas and the rice and cook together as u normally cook rice and then stuff them inside the chicken and put in the oven until cooked u will have a very nice flavour and new dish.

Get some bacon and fry the chicken and bacon then add some chinese spices and soy sauce then mix in the rice and peas with beansprouts and water chestnuts. Gorgeous!!

Try it Mexican style :
Steve's Mexican Style Chicken Stew with Garden Peas and Rice
Serves 8

INGREDIENTS :
3-pound broiler/fryer chicken, cut up. Follow Safe Handling Instructions
2 teaspoons salt
1/2 teaspoon freshly ground pepper
1 teaspoon fresh ground coriander
1 teaspoon dried oregano leaves or 1 Tablespoon freshly picked oregano leaves
2 cups water
1 15-oz can stewed tomatoes (your favorite style or brand)
1 yellow onion, peeled and chopped
4 fresh garlic cloves, peeled and minced
1 cup uncooked rice (your favorite brand)
1 cup freshly picked garden green peas
1/4 teaspoon hot sauce (optional - your favorite brand)
1/4 cup green pepper, chopped
1/4 cup red pepper, chopped
1/4 cup cubed ham, fully cooked
1/2 cup freshly grated Parmesan cheese

Place chicken in large skillet or Dutch oven. Sprinkle with salt, oregano, coriander, and pepper. Add the water, can of tomatoes (with liquid), onion and cloves of garlic. Bring to a boil, then reduce heat. Cover and simmer for 30 minutes.
Stir rice into mixture. Cover and simmer 20 minutes or until the chicken is done. Add peas, green and red peppers, and ham to chicken. Cover and simmer an additional 5 minutes. Serve with the Parmesan cheese.
Serve with bread, a fresh garden salad and a glass of your favorite iced tea. Enjoy.

Chicken stock for the base and add lots of Tabasco or Hot pepper sauce.

If it's anything like the Chicken and rice I like to make, use cheddar cheese soup instead of cream of mushroom, etc. You can top it with french fried onions or crushed potato chips (flavored ones are good!) That's about all I do to liven it up. Hope this helps.

Add a few jalapenos or chili's that should liven it up. Add at time chicken is browned.

Also, sweet and sour sauce out of a jar, hoi sin sauce or plum sauce are nice.

Using pulled chicken add onion,mushrooms,carrots,broccoli, shredded cheese,your choice and pasta. Use an Alfredo sauce or crm. of mushroom or crm. of chicken soup.Mix all ingredients,top with parm cheese and bake.For an extra crunch I add sliced water chestnuts just for something different.

Add a few more veg, or add some egg for egg fried rice! try stirring in sweet and sour sauce, that's great with rice. add a few drops of tabasco to spice it up too!
