How does one, when is cognizant of a workplace that has a majority of their workforce from central and south america, alert the authorities to it? Or, would they not care? This is a place that I worked at, and although I havent' seen documentation myself, I am pretty sure that there are non green card caring folks working at this restaurant.

Why would you want to break apart families...based soley upon you "suspecting" that they may be un-documented ?
To answer your question....call the US Border Patrol....

For all the hoopla, Immigration may, or may not care. They may, or may not do anything about it...

Meaning, if an employee has a family member here who needs assistance in any way, even financially or child care, or what have you, Immigration is not going to wipe him out just because someone called.

If these people already have lawyers and are on their way to obtaining their citizenship, you don't have a case either.

I'd be wiser and inquire about the situation before I try to raise a stink.

You can e-mail the U.S. Immigration about this issue, visit:
http://www.uscis.gov/graphics/index.htm

Or you can call your local Immigration office; get their number from the yellow pages.
You also can report them to the IRS, visit their website:
http://www.irs.gov/

But both above government agencies doesn’t do any thing usually, it depends on your luck, both agencies receives thousands of reports daily, and they don’t even enforce 1% of them.
