2 mangos chopped up
1 medium red onion chopped up (small pieces)
2 jalapeno peppers chopped up (small pieces)
cilantro chopped (amount varies on your taste, I usually use about 1/8 cup)
juice of one lime or lemon
toss this all together and let sit for at least a couple of hours in the fridge, I love it!!

MANGO SALSA
12 roma tomatoes, seeded, diced
1 red onion, diced
5 jalapenos, diced(add 1/4 habenero pepper for extreme heat)
2 mangos, diced
1 cup finely chopped cilantro
1 tsp salt
1 tsp ground cumin
1 tsp chilli powder
1/2 cup olive oil
1/2 cup freshly squeezed lime juice
1 tbsp tobasco or other pepper sauce
MIx all of the ingredients together. Refridgerate for 1 hour and then serve. Keep in mind that the salt will draw out the juices from the ingredients and so the mixture may have to be drained from time to time. Save the juice for Bloody Mary's or Caesar.

This is the one I make:
Mango Salsa
Fresh mango salsa is easy to make and perfect with halibut or salmon or as the salsa in fish tacos. I also serve it w/ chicken.
1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup) 1/2 medium red onion, finely chopped
1 Jalapeño chile, minced (include ribs and seeds for a hotter taste if desired)
1 small cucumber, peeled and diced (about 1 cup)
3 Tbsp fresh cilantro leaves, chopped
3 Tbsp fresh lime juice
Salt and pepper to taste
Combine all of the ingredients in a bowl. Season to taste with salt and pepper. If the salsa ends up being a little too hot or acidic for your taste, you can temper it by adding some diced avocado.

Hey, 1 large mango, peeled, cut in 1/4-inch cube
1/4 cup red bell pepper, cut in 1/4-inch dice
1 1/2 tablespoons fresh basil, finely chopped
1 1/2 teaspoons red wine vinegar
2 teaspoons lime juice
1/2 teaspoon Sugar
1 jalapeno pepper, seeded and finely chopped, or to taste
In a medium bowl, combine all ingredients. Mix well.
Let stand at room temperature a half hour before serving or refrigerate up to 24 hours. This does not hold up well and should be used within the 24 hours.

1 serrano chili, seeded and veins removed, finely diced
PREPARATION:
Mix all ingredients and refrigerate overnight to enhance flavors. Serve with tortilla chips or on top of carnitas.

You need:
Mango 300g (about 11oz or 1 large)
Zest and juice from ½ lime
½ Red chilli
Coriander leaves from 2 stems
Salt
Black pepper
Method:
- Peel mango and cut into small cubes
- Grate the lime zest.
- Cut chilli in half, remove the seeds and finely chop.
- Finely chop coriander.
- Add all ingredients together and gently fold to combine.
