Lemon is always good.
I love to broil my salmon and I make a mix of Real butter and lemon juice to baste it with. I sprinkle Lawlery seasoning salt on the fish, powdered garlic and paprika.
MMMMM! You can also poach salmon in OJ.

I like "Johnny's Fish and Seafood Seasoning".
Herbs that go with fish:
Dill Weed, Marjoram, Mint, Rosemary, Sage, Tarragon, Thyme

This may sound really dumb, but don't knock it until you try it.
Montreal Steak Spice. Yes its a Steak seasoning product but it goes great on salmon, pickerel, or anyting else you might cook (Not recommended for deep fried fish) Use Tartar sauce for that stuff.!

It really depends on the fish. I am fond of dill, pepper, garlic, chili powder, and there is this asian seasoning that contains nori and sesame seed that is really good too.

lemon pepper is good on salmon...blackened seasoning or grill seasoning is good on catfish and lots of other freshwater fish

I use salt and pepper, but I like to bake my fish with onion, mushroom, pepper , and garlic over top!
