use the real stuff---here is the combo i use--you will learn by the sauce how much of what to use---I'm afraid I don't measure I've made it so often!---learned it at an Italian restaurant:

whipping cream
butter
garlic granules--not garlic salt
Parmesan and Romano cheese, if you wish
black pepper
parsley flakes

basically, i melt the butter in the a pan low-med heat, blend the two, add the whipping cream after it is blended well, and have the cheese shredded, and start whisking this in. you will notice the sauce is thickening when it collects on the sides. keep whisking the cheese in. when the sauce sticks to a spoon in a layer, it is ready. while you are doing this, shake some pepper in periodically and go from there....once it is served, top with a little parsley and you have your homemade Alfredo....just like the restaurants make!

Cream..without a doubt. Melted butter with flour and milk actually make a white sauce. Mix some shredded cheddar into a white sauce with some onion powder, salt and pepper and you'll have the best mac and cheese ever or the best cheese sauce for your veggies you've ever tasted. Bon appetit.

Use heavy cream and butter. In my opinion, if you use flour just go ahead and throw it in the garbage, it is not fit to eat. By the way, there are about a dozen receipts for Alfredo sauce in the Food network web site. I go to Foodnetwork.com anytime I want to know how to cook anything.

I prefer a butter and flour roo just becuz it is quicker than the cream. The cream is smoother and richer but takes more effort...then again a little effort usually pays a dividend ...
