I have everything I need for Hard Cider, execpt every recipe i have doesn't give measurments for Yeast. I have wine yeast, how much do i need for 4 gallons of cider?

If you have sachets of dry yeast, use one complete sachet. They're sized for 5 gallon batches. More yeast than you need will work very well...it will just result in a quicker and cleaner fermentation. Too much is better than too little.

If you have liquid yeast, the vials are sized for 5 gallon batches, too, so a complete vial will be perfect.

Either way, follow the instructions printed on the sachet/vial for any advance preparation prior to putting it into your cider. If you have just some bulk dry wine yeast, start with about 5g of the dry yeast, add to about 1 qt of warm water and let it rehydrate for about an hour before pitching it in your cider.

Just a packet, if that's how you get it, if your using Bread yeast one or Two packets is more than plenty, Really if you get right down to it one little cell will eventually grow into an enormous amount of yeast, that's what it does for a living! Make alcohol and babies, come to think about it...it'a alot like me!

If its fresh unpasteurized apple juice you don't have to use yeast. However, I'm searching for the same recipe too. BC who wants to wait 4 months?
