Hot Salsa Dip
rec.food.cooking/Mary Jo Brue/1995
To make a super hot dip, spread 8 oz of cream cheese in the bottom of a casserole dish or pie plate, grate some onion on top, pour a jar of picante salsa over the top, grate 8 oz. of monterey jack cheese on top of that.
Bake it at 350 for 15 or 20 minutes, until everything's all bubbly and the cheese is melted nicely. Serve with tortilla chips.
You can also add meat to this and it's great: brown a pound of ground meat, then add a package of taco seasoning. Layer the meat between the onion and the salsa.

What kind of salsa do you want to make? When I was in Mexico, there were nine or more salsas on the condiment bar to dress up the tacos. Some of them were mild, some of them were picante, and some of them were incendiary. They were all good, though.
Experiment with a few recipes until you find what you like.

My Mom has a great & simple recipe---get a green pepper, a tomato and an onion all the same size (size of your fist), and chop up. Stir in one packet of Taco seasoning mix & let stand for 2 hours before serving.
Chop & add hot peppers if desired.

All the ingredients the above person said, but sometimes people add tabasco sauce also, might be because of the vinegar in it adds another kick to the flavour.

depends...what kind...some make it with beer, stewed or fresh tomatoes, with different chilies, or for a kick adding tropical fruits.
Not a recipe...sorry. but simple is good:
(all chopped and mixed)
fresh tomatoes
onions
jalepenos
cilantro
lime juice
salt and pepper
variations:
mangos
papaya
tomatillos (the green little tomatoes)
watermelon
jicama
