Are their special needs food related?
Just out of curiosity, why would someone give me thumbs down for asking if the special needs were food related? That could definitely affect the way people answer the question. Food allergies are very common.

If you wrap the chicken breasts in foil and put in a can of cream of chicken soup, it will be really tender. Then you could put all the other stuff in a skillet with the broccoli, and garlic, and a little curry powder, just a small amt. for taste, and just steam covered in the skillet. Then take it off and put the cheese on the top, put it all in a casserole dish and let the cheese melt. Don't need the garlic or whatever else you mentioned ziti, which I am not familiar with, but it should be very soft and easy to eat. If it is too complicated for them, then they could bake the chicken, then just take it out and add the brocolli and wrap back up and bake only a few minutes, then add the cheese, unwrap it and then let the cheese melt and brown a bit. Were you putting some kind of noodles in it too, or what is ziti? Anyway, the cream of chicken soup with the chicken breasts, w/o ribs, really is good and very moist. I put it on my dressing at T.Day and Chirstmas, it really makes it moist. If you want noodles too, just boil water and put the egg noodles in there, I put also celery, and onions and pour the soup over the chicken breast and noodles plus the veggies. Cheese on top and bake until the cheese melts and browns. It is good this way too.

I would add some garlic and some basil and oregano to make a bit more authentic of a dish. The children will enjoy adding the spices. I work with special needs clients also, and cooking (and of course the eating of the cooked items) is always a great lesson plan. A lot of the excitement is brought out in the details and the spices will add a lot of authenticity. Have a good night and Happy Cooking!

I would add some parmesan cheese also, and maybe some basil. I would also add some real butter to the olive oil while cooking the chicken, to break up the oil and give it a little extra flavor. Sounds great!

It sounds good, but you are going to need some type of liquid/sauce base to bring to together.
Since it sounds like the class will be fun, you could always open a can of whole peeled tomatoes(add some of the juice to the dish) and allow each child to "squish" one into the recipe.

It really sounds good! The only thing I can think of would be a can of Cream of Chicken, and may be a little salt and pepper to taste, or 3/4 cup of rice for body.

If you go to foodnetwork.com and type in a couple things like chicken broccolli ziti, it will bring up some different recipe ideas. I would make some kind of alfredo sauce to go with it.
