I need a subsitute for panko because I cannot find it in the stores around my area. I am using it for a chicken recipe. Apparently, panko is Japenese bread crumbs. Please help. Thanks.

You can substitute panko with ordinary bread crumbs in just about any recipe. But why would you when you can make panko quickly and easy on your own?
Basic Panko Recipe

Any white bread will do for making panko. An Asian chef I once worked with swore that the best homemade panko came from Wonder Bread!

If you don’t have white bread, use soda crackers--such as Saltines and oyster crackers--or Melba toast instead.

1. Push chunks of white bread through the shredding disk of a food processor to make coarse crumbs.

2. Spread the crumbs on a baking sheet and bake at 300 F degrees until the crumbs are dry but not toasted, about 6 to 8 minutes. Shake the sheet twice during baking. Be careful not to let the crumbs brown!

3. Immediately remove bread crumbs from oven and allow them to cool.

Cornflakes are a good substitute and have a similar texture to panko. Rice krispies will do, but don't crush them too much before using as breading.

I feel sorry for you, it is such a great texture on food. In a pinch I have used ore-ida or any brand of instant potato flakes. I had an emergency dinner to fix and I used this on trout and it worked so good I still do it. Asian Grocers on-line is a good place to get those hard to find items. Also talk to your store manager about a special order; that's how I got it here. Best of luck to you!!
