You could do a simple curry (do you have any pre-made curry paste, or the dry spice?) with the coconut milk, the peas, and some other veggies if you have them, and serve it over rice. Use the broth to cut the coconut milk so it's a bit lighter, and then you won't have to add salt! Just add the peas at the end, since they're already cooked, so that they won't turn to mush. Alternatively, something simple could just be to flavor the peas with some warmed broth, or cook rice in the broth, and serve them together with some fresh herbs and spices for a quick, easy Monday night dinner.
