Orange ruffie, trout, salmon, halibut, you name it!!! The best way to cook them is to cover them with lemon juice and put a pat of butter on top of the filet, cook them in an aluminum foil pouch on the grill. when they are done you can quickly sear them on the grill if desired!

There are so many kinds of fish and seafood that there is no such thing as 'the best'.
You can take a nice grouper fillet, season it with a little Mexican style spices, grill it and it'll make your mouth thank you for a long time.
You can take a nice thick yellow-fin tuna steak, coat it in sesame seeds, pan sear it to a nice rare to medium rare, and serve it with some wasabi.
You can take a large walleye fillet, bread it, pan fry it, serve it over mashed potatoes, and top it with salsa.
Paella.
Shrimp Enchiladas.
Blacken Catfish, then serve with Red Rice and Beans.
The list can go on and on.
Each of the above types of fish are completely different in taste and texture. So it is impossible to say which is best.
Try them all, and discover for yourself. There are thousands of different recipes out there.

salmon - high omega. if you are lazy don't even have to cook them eat them raw with wasabi and kikkoman soya sauce cause it just tasted so good. i know it might sounds a little gross to you but hey that's really true and that's why japanese are so healthy and long life..........
if you want to have them cook you can even slice it thinly the way you eat it raw and stir fry it into your favourite vegetables. you can even grill them and make a favourite sauce of your own or pan fry it lightly and eat it in your favourite sauce. no matter how you cook it salmon doesn't need a long time to have it cook cause when it's too cook it's not nice to eat cause it's too dry.

I personally prefer catfish filets. I like them fried with a breading made from 1/2 corn meal and 1/2 flour. My favorite, however, is to take the filet, salt and pepper, squeeze of lemon, and grill them over a slow mesquite wood fire (basically smoking them). They cook rather quickly so you have to stay with them.

My favorite would be Halibut.... Firm white fish w/a light flavor. If it's fresh it is best
Salmon: IF it is fresh caught.... I prefer the chinook thaT HAVE not BEEN IN FRESH WATER...
Fresh Tuna is o.k. as well

Wahoo. It truely is the best; so firm, not fishy tasting. You can fry it cut in bite size pieces, in cajun fry mix/peanut oil. Grill it, steak size, basted with lemon/fresh basil/butter or lemon/butter/garlic. Holds up the best for cerviche, too. That's how I make it.
