Taco pizza made with a cornmeal crust, spread with black bean refried beans, a layer of ground beef sauteed with garlic and cumin and topped with sliced cherry tomatos and green onions. then cheese on the top. Yum! Then vanilla ice cream for dessert. It's a very satisfying meal.

This is a lovely, "rib-sticking" northern European meal, sure to please even the most picky of your friends...and it has no animal products!

Gardenburger makes some lovely vegan riblets. I will either take them (ready made) or make my own barbeque "meat". If I don't use the Gardenburger riblets, I'll take 1 cup of textured vegetable protein or 1 pound of hard tofu. I'll dice up the tofu, if I'm using it into 1/4 inch cubes. I will prepare a barbequed "meat" marinade: 1/2 cup non-honey barbeque sauce...any flavor will do with 1 cup water and 1/4 cup Balsamic vinegar added. To this marinade I'll add 1/4 teaspoon of the following: garlic powder, Splenda (sweetener), and onion powder. Then I'll add 1/2 teaspoon vegan "beef" flavoring. Stir the marinade well until all of the ingredients are well-mixed. Add the cubed tofu or textured vegetable protein. Marinade for 2 hours.

Meanwhile, slice 4 large Yukon gold potatoes into small slices. Boil in 2 cups water until done but still firm. Heat 2 tablespoons of peanut oil in a large skillet. Add to this 1/2 cup of finely diced brown onions. Cook the onions until they are glassy. Add the cooked potatoes and fry until they are golden brown. Salt and pepper to taste. Set aside and keep warm.

Meanwhile, prepare your dessert...a lovely sweet potato or carrot pudding. Cook 2 large sweet potatoes that are peeled or cook 6 large carrots. When the vegetables are cooked and soft, mash well. Add to the mashed veggies 1/2 cup plain soymilk and 1/4 cup Splenda. Add to this entire mixture 1/8 teaspoon of the following: cinnamon, nutmeg and allspice. Mix the pudding until it is a uniform, smooth consistency...like a pudding. Top this pudding with apples made for pie filling. Set aside.

Now you are ready to cook the barbequed "meat". Heat 2 tablespoons peanut oil in a large skillet. Fry 1/4 cup brown onions until glassy. Gently add the textured vegetable protein or cubed tofu. Stir very gently for 5-10 minutes on low heat until everything is hot. Now add 1 cup Bavarian-style sauerkraut (this is the sauerkraut with cumin seeds and brown sugar added). Heat the entire mixture until the "meat"-sauerkraut mixture is well heated and combined. If you are using the Gardenburger riblets, simply place your desire amount on a microwave-safe plate and cover with the sauerkraut. Heat in your microwave for no longer than 5 minutes for 4 riblets, 3 minutes for 2 riblets...covered with sauerkraut.

Serve the hot barbeque-style "meat" and sauerkraut with the hot fried potatoes and another vegetable of your choice on the side. We like brussel sprouts. You can serve a small side salad of butter lettuce, diced tiny radishes and tomatoes. Even sweet dill pickles on the side would be nice.

Serve the carrot or sweet potato pudding and apples with vegan whipped topping.

This meal is delicious with a light beer, a white wine or mulled (hot) apple juice with cinnamon and clove seasoning.

Enjoy...a lovely meal with NO animal products!!!
