Not sure where you are located, but here on the East Coast there are several such schools to teach boat building. One of those is in Amesbury Massachusetts, called Lowells Boat something or other. Been there for years. They teach you how to build what is known (ironically) as the Amesbury Dory. A unique rowing dory. I've seen several here on the Merrimack River, what a fine bout they are! I believe they also teach how to make a skiff, or at least they did at one time. I checked google for making sails. Good luck to you.
