place the chicken in the baking dish skin side up...season with salt, pepper, onion powder and parsley flakes. Sprinkle a few bread crumbs on top of each piece and bake at 350º until done.

It is not good to have rice and potatoes in one meal. They are both startches, and too heavy on a person. Cook one or the other, and make a vegetable dish, if cooking the rice, okay?

Chicken and Rice

4 to 6 leg quarters
1 cup uncooked rice
1/2 a cup raw carrots, chopped
1/2 a cup broccoli florets
1/2 a yellow onion, chopped
2 cloves of garlic, chopped
2 bay leaves
1 tablespoon dried oregano
1 teaspoon of salt
1 tablespoon of black pepper
2 cups of chicken broth

Put everything in a roasting pan, except the chicken
Stir it well
Place the chicken pieces on top, (season the chicken with some of the herbs and spices, but not the salt, the salt will dry the chicken out)
Cover with a piece of foil
Bake in a 400 degree oven for 30 to 40 minutes
remove the foil, and let roast until the liquid has cooked into the rice, and so the tops of the chicken will brown. Delicious!

HINT: If you dont want to use fresh veges, use a half a bag of frozen vegetables, any mix you like, put them in while they are still frozen, do not defrost.

I wouldn't cook rice and potatoes both - too much starch.

deep fry the leg quarters so they go faster yum crispy and tasty chicken with hot sauce added or bbq then put in oven to heat sauce while u fry french fries or sliced potato wedges or
make rice and fry it with egg and green onion like pork fried rice from the chinese restaurante

My wife has a tabletop convection oven. The kind they sell for about $70. Nothing added like oil or water just puts spice on it. all the flavor is there and it is juicy and cooks pretty fast.
